I hope you have a happy Mardi Gras! Its name "Fat Tuesday" refers to the feasting that would take place on the Tuesday before Ash Wednesdsay, when fasting for Lent would traditionally start. I made the Vegan Jambalaya last night for dinner. It was super yummy. I used vegan sausage in stead of bacon and chicken in mine. We alway celibrate at work. Our boss passes out leftover beads for everyone to wear for the day.
I recently went to Mardis Gras and I loved it. I didnt get to see fat tuesday which is today but nothing beats being down there in NOLA for the real thing. Happy Fat Tueday!!!!
I am enjoying Mardi Gras right here in my hometown of New Orleans! I love this place so much!!! I am so glad to be enjoying it with all of my friends and family!!! :)

Recently, Kind Lifer Christal Bowman wrote in the forum about a fabulous restaurant in the French Quarter of New Orleans that will make their menu items vegan upon request!
Christal says:
"Go to Bayona in the French Quarter for a fantastic meal! I was just there last week and had an amazing vegan dinner! I told the staff I would eat whatever vegan delicacy they wanted to serve me, and was rewarded with fresh greens with shaved fennel and truffle vinaigrette, followed by buckwheat soba in creamy miso sauce with anise-glazed carrots, shaved asparagus, caramelized shiitakes, baby bok choy, and sunflower sprouts. The cucumber julep was also delicious!
Kudos to Susan Spicer and her crew for being so creative and accommodating!"
