
Hi there – I’m in Shreveport, Louisiana right now working on a film, and wanted to see if any of you Kind Lifers had suggestions for me. Is there anything great that I should do or see here before I leave?

Wish I would have checked this ealier. Shreveport is my old stomping ground. There are several cafes and little mom and pop places outside of centenary college off of East King's HWY that are veggie friendly. Also, there used to be a place called the green pickle off of Line Avenue if you head south from East King's Hwy. It was pretty good from what I remember. Of couse, the last time I lived in Shreveport was over 8 years ago. I'm originally from Natchitoches, which is an hour south of Shreveport off of I-49. My friend Oona runs a vegan store called A Natural Affair there. If you ever head back that way, run down to Natchitoches. It's a pretty cool place and Veggie Friendly.
If you ever head to Omaha, there are plenty of great places here too! :)
I recently, this last week, took a trip to Colorado. I was somewhat disappointed to discover there were not an abundance of vegetarian/vegan restaurants on my trip (?) what to do? What I figured out along the way is that most restaurants DO accomodate the plant-based eater. Along the way each place we stopped at had several 'veggie' choices on the menu or would happily make substitutions for me. How great was that! I do want to make a couple of recommendations for a good meal, in Steamboat CO we had a fabulous breakfast/lunch at Winona's and the most fantastic Portabello Mushroom dish at The Crags in Estes Park.
While the idea of the Food Network having a vegan cooking show is long overdue I think that if they were to incorporate more vegan dishes into their existing shows we would actually see them becoming more accept by the mainstream, just a thought...

I know your Shreveport call out was many months ago, but I was born and raised in Shreveport, so I thought I'd still reply in case you film another movie there some day. If you're there filming again, you DEFINITELY need to eat at Earthereal-- and not just because I worked there for many years, ha. :-) It's a great vegan-friendly lunch spot. Also vegan-friendly is Sunshine Health Foods, a mini-grocery store/restaurant. And, if you have some time off and want to explore the area a little, I think you'd really like visiting the Chim Haven. It's a sanctuary that provides lifetime care for chimps who have been retired from the medical and entertainment industries. It's really great! Here's the link to their website: www.chimphaven.org
I know Shreveport isn't the most exciting (or veg-friendly) place, but if you do a little searching, you can find some pretty great things!

Hi there. I was just in Shreveport, Louisiana working on a film. There is a great head chef, Chef Dwight, at the Hilton there who has been insanely helpful in making me delicious food. He made a stuffed tomato dish with rice, mushrooms, asparagus, saffron, zucchini, and spinach the first night I was there. He is very kind and helpful. If you live nearby, I highly recommend going to the Hilton to eat. Ask Chef Dwight to make you the food he made me. There is also a local chef, John Strand, who will deliver to you or cook in your home. He is very reasonably priced. A few of the things I loved from his menus were: Blueberry Walnut Pancakes, Crisp Artichoke Hearts, Baked Acorn Squash, Almond Cinnamon Oatmeal, Teriyaki Stir Fry with Rice Noodles, and Couscous and Soy Nut Stuffed Tomatoes. MAKES 4 servings
INGREDIENTS
4 large tomatoes (slice off the tops of the tomatoes and scoop out the insides for stuffing)
3 cups cooked orzo pasta
1 cup fresh blanch broccoli flower
1 cup sliced blanch carrots
2 cups fresh baby spinach
2 cups green beans (cut in half)
1 teaspoon salt
1/2 teaspoon black pepper
STEPS
Heat the stock in a sauce pot.
Add in the broccoli, carrots, green beans, and salt and pepper.
Let this simmer over low heat for 3 minutes.
Then add the orzo pasta, and mix them well together over low heat for 8 minutes.
Take the pot off of the heat, and fold in the spinach.
Stuff each tomato with the mixture.
Place on a sheet pan, and bake in the oven for 350 degrees F for 12 minutes.
Serve and enjoy!
Dwight serves this dish garnished with sliced cucumber and freshly chopped parsley, but you can garnish yours any way you like.
