Okay and update for today!!!   I was so good yesterday.  When my hubby and I went to the movies I ate a Larabar(Chocolate Mole) and water.  I wasn't even hungry or craving sweets!!  Also dinner went well too.  Traditional Miso freshly made Yum with vegetable sushi and Spring rolls with delicious veggies in rice paper.  Okay I went to starbucks and had a Soy Chai tea but a girls got to live.  Oh did exercise yesterday.  Not quite as much water intake as I would have liked.  I will make up for that today though.

That's awesome fitmama!  I'm finding it can be hard to eat in certain situations outside the home, but not others.  For instance, I've always brought my own food to movie theaters, so that isn't too bad.  But yesterday I started a nannying position for 2 young boys.  Their mom actually thought it was really cool that I was vegan and said it must be so difficult to do.  I assured her it was not, but all she has in the house are various cheeses, meats, yogurts...I made some brown rice but I had already had that twice in one day...Put on soy sauce, peanut butter, and some green beans.  It was okay, but proved difficult since the kids were getting fish sticks and macaroni, two old favorites of mine.  For dessert, they had creamy vanilla icecream...I decided to start bringing my own food.  Luckily, the 2 boys could care less about my veganism, as it only means that I won't be eating their ice cream or fish sticks.  Apparently they are very protective of their dinner.  Oh well :). 
Yesterday went really well for me. lunch was salad with spinach, beets, and carrots. (i noticed the acidity though in the spinach i am going to finish up this package and then move on to other greens) oatmeal and apple sauce in the afternoon. Then a trip to whole foods where i got ingredients for dinner. I made the pecan crusted seitan with whole wheat pasta and put some diced tomatoes on top. I also made the sicilian collard greens. My husband loved all of it and even ate the seitan I didn't finish. (he's a meat lover)

today, oatmeal for breakfast, salad and quinoa for lunch...i forgot snacks though and i am getting antsy. been trying to drink lots of water. 

Wow everyone is doing so great!  Yeah!!  Today I was less than stellar with my ezekiel bread vegan butter and apple butter(homemade).  It was fun making my apple butter.  I made it from our organic apple trees at home.  Yumm Yum.  I had organic raspberries and a banana.  For lunch leftover vegtable sushi, rice rolls with veggies, and an apple with natural peanut butter.  Then for snack a honeycrisp apple and some almonds.   Craving foods today!  I totally get what Alicia says about the to much salt.  I felt that way after lunch today.  Between the pickled ginger and soy sauce.  I have drank so far half a gallon of water.  And a little exercise today.  Not as much as I hoped.  I am going to try to get yoga squeezed in before bed to relax me from this stressful day!!

I don't know fitmama, it sounds to me as if your eating was pretty stellar today!  Homemade apple butter?  Could you share the recipe with me please? :)  I mean, I know we are all going for superhero status here, but compared to any typical american diet or even so called "healthy" fad diet, you are doing awesome!  Keep up the good work!  I ate homemade tomato sauce on whole wheat pasta yesterday and told my boyfriend I was having a junk food night and he laughed at me :).  I think you're doing a great job and love your contributions to discussions!  Hope yoga was fun!
Hello--I looking to move more and more to vegan- I live with a very big meat eating family and just give into their ways because it is easier, but the more and more I read (like the Kind Diet) the more I feel the need to go vegan-How do you deal with a meat eating family?
First I want to say thank you Evie for the support that was so sweet.  CCRN43 I think that slowly easing into would work.  I am from a huge meat eating hunter family.  My husband is a Huge hunter and fisherman.  Its his passion in life.  So I sympathize.  I slowly started eating less meat and then no meat at all.  And then I cut out seafood and fish, and then finally eggs.  Dairy wasn't a problem since I am lactose intolerant.  I get stares and questions.  I simply tell everyone that I am making a healthy change for me.  I choose to eat healthier and better.  No one will argue with you if you are eating healthier to feel better.  I found that when I simply said I want to feel better no one tried to disagree because they can't make a debate about you making a change for healthier body.  Don't worry we are all here for you for support and questions when things don't go just as you hope.   No Worries, I hope this helps!
Okay feeling great today!  Last nights debacles are in the past.  Actually I wasn't bad or anything.  It was just a tiring day.  So this morning I had my green jasmine tea with my variation on Alicia's Mom's granola.  Oh so good.  Feeling guilty eating it .   It tastes so good it seems like  I am being bad.   So today I am off to teach yoga and kickboxing!!!  I will try to squeeze a healthy lunch and dinner in.  I will be on the road so its going to be a challenge.  I do have to say that I can't go completely without fruit.  I know the superhero diet is minimal on fruit.  I don't over do it.  I just need my three pieces a day.  I tried it without and ughh  I felt low on energy.  I really love a banana before I work out.  Not right before but about 30min to an hour before.   I think the potassium is important and I feel so great when I do it.   Anyone one else agree???   Well I will check back tonight with the final results of the day.  Oh yeah I have lost   2 lbs in this last few days!!!!

welcome ccrn43! fitmama, you're doing great you're an inspiration. I think fruit helps when you work out a lot, you need that healthy carb rush before a workout. its all about finding whats best for you.

in terms of working with a meat eating family, i just have a husband (thank goodness...not sure if i could take care of kids too) i don't want to pressure him into changing if he doesnt want to, so last night I made the moroccan saffron couscous, which he helped me with all the chopping, and then he made some grilled shrimp and threw it on top. we were both happy, and he was surprised at how full he felt from the couscous and vegetables. My plan is to be respectful of what he wants for his body and health, as he is being respectful of what I want.

oh...and I lost a pound in 4 days! hope it wasn't just a trick of the scale.

Yeah congrats on the pound lost. If you are staying hydrating and eating well be sure its not a trick.  Plus don't you feel awesome.  I know I feel so good these days its totally worth it.

Congrats to all those who are losing weight!  Um, just curious...I'm feeling hungry fairly often...Is there a better way I could eat, or better things?  Today I had 4 heaping bowlfulls of sweet potato kobucha lentil stew,a small bowl of miso soup, 1/2 cup quinoa and an apple.  I just get hungry really easily.  Right now I'm famished!  What do you guys make to really fill you up?  I'd like to eat a little less frequently if possible, but maybe that's just how my body works.  I'm 22 and on the smaller side...
