Sounds so bountiful and comforting, Alicia - always did love the idea of this recipe and how everyone raved about it...omg, how to get in all this cookin' of your recipes I wanna do - LOL!  (The eternal question... :)
I love that recipe.  My meateater husband loves it and eats most of it when I make it.  For the Bok choy if you don't have Ume vinegar what do you use??  I want a flavor full veggie to entice the meateaters in my house!
Ok, I am all for this meal but what the heck is saffron threads?

Bonny, Saffron threads are in the spice section. They can be pricey, but a little really goes a long way. ^_^
You can also get saffron at ethnic grocery stores and it is usually a bit cheaper. I buy it at an Indian grocery store, but I'm sure it can also be found at Hispanic or Asian stores as well! Good Luck and Happy Hunting! smiley-smile.gif
I actually just had this leftover for lunch today!  Delicious!  When we had it for dinner the other night,, my husband (a meat-eater) just loved it and my 21-month old kept picking out all of the carrots! :)  
OH wow, I love food like this I can make and it will keep a few days. Thank you for posting it. I will definately add this to my recipe book.

Is saffron a necessary ingredient? Since I am on a tight budget and don't know if I can afford it....will it change the taste?

This is the first receipe I made from the book...ITS AMAZING!!! I have been eating it for 3 days.  Brought the PB cups to work today and they are a huge hit...THANKS!!

This sounds amazing. Butternut squash is so magical and delicious! It tastes like fall!
I agree with you BikiniBy30! The other day I roasted some butternut squash and just served with rice and it was SO yummy. Today I used it to fill up a soft corn tortilla (not sure if the tortilla was superhero or not but it was vegan) along with sautéed collard greens (my first time making them....yummy)
As far as the saffron goes, I'm curious how much you've had to pay. Somebody mentioned that a little goes a long way....but...today I paid $15.99 and that was only enough to make this recipe twice! Ouch! I'm not sure if I just made a bad choice on where I bought it or if I picked the wrong brand.
