I'm glad someone didn't know what seitan is cuz I don't really know either. Also, what is mirin? I am wanting to try kabocha stew but some of the ingredients I've never heard of and have no idea where to find them. Where I live we only have Kroger. They have a small section of organic and vegan foods that I've been exploring but I haven't come across alot of these ingredients. There is a Trader Joe's not too far from where I work so I can look there sometime but it helps to know what I'm looking for.
@Peggy, my regular grocery store has it in the organic produce section, which is where they also have tofu, Gardein products, and all the other meat substitutes. Does your market have tofu? If so, I'd look next to where the tofu is.

I, too, have to be creative where I shop because we don't have any really good healthy shopping stores. I found it in the refrigerator section next to the tofu. If nothing else, I'm sure you can order it on the internet too.
