Coffee Fudge Brownies

This was my first vegan dessert that I made and it was great!  I couldn't taste the coffee very much so I'll probably add more.  Also, I didn't mix in the walnuts.  I just sprinkled them on top.  I cut the amount of chocolate chips and butter in half, but next time I probably won't have the frosting at all.  I enjoyed the actual brownie part the best.

Oh!  And I have some pretty heavy anti-vegan people around me and I made some of them try the brownies and they loved them!

I just made these and they are still cooling but they taste really good.

I made some substitutions:

I used safflower oil for the canola oil

I used ground sucanat for the maple sugar (I ran the sucanat thru the blender to powder it)

I added in 1 tsp of vanilla and 1 tsp of cinnamon

The coffee isn't meant to be tasted, it's there to amp up the flavor of the cocoa.

I used a 9x13 pan and baked it for 25 minutes

I am not going to glaze it.

Has anyone heard of this/know anything about it? I was looking for maple sugar and could not find, but did find this - it says it is a low glycemic index sweetener - however, then proceeds to say they can't prove it?

Is it better than plain old sugar? In making brownies, should I just use maple syrup!??

I have this cooling right now.  Funny thing is that it looks burnt, but I don't think it is - just darker than normal brownies.  I made this in an All Edges Brownie pan - so it cooked up in about 28 minutes.

Yeah - these didn't come out like i thought they would.  The name says "Fudgy" which led me to believe they would be not cake like.  These were so cake-like and crumbly that I had to eat them with a spoon because they wouldn't hold together.  I followed the recipe exactly.  What happened?

I just made them last night as well, and it sounds like I got the same result as you Dolores. I used a 9 x 13 pan and baked for 40 minutes.... I think there needs to be more flour in the mixture, and possibly and egg substitute such as EnerG, and then bake for a bit longer than the recipe says. They still taste yummy:) Just kinda crumbly and mushy... haha. I will make them again sometime down the road and post again!

I made them yesterday and everyone loved them! I hold back shouting- They're VEGAN- now coz then people tend to change their minds!!! 

Seriously, every time I open the fridge, there's another one gone.  Devine!

Oh how I miss these! I live with my sister and she yells at me everytime I even mention the word "oven." Can't say I blame her.
