pumpkin pie
God that sounds delicious! :) I am so making it!
So I just mixed up the batter for the pie and used West Soy Soft tofu...it doesn't look nearly as smooth as the pic for the recipe! Do you think it's because I didn't use the recommended type of tofu?
Hi Megan! Hmmmm...did you use SILKEN Tofu (not a brand name, it's a type - I think there's soft and firm (as the recipe calls for) silken toful)? Maybe that's it? With desserts and such, it's the silken tofu that does the trick, I believe.  I have UNBELIEVABLE puddings/mousses with silken tofu...I so dyin' to try this recipe.
I can't wait to make this. I think I'm gonna make it for my birthday (which is one week prior to Thanksgiving) and then make it again. Can't have enough pumpkin pie :)

My Birthday is tomorrow, b-u-t my NON-vegan wifey will be in the kitchen
preparing a couple dishes I've tried & like...from The Kind Diet. They are:
MIXED BERRY CHEESECAKE & CHOCOLATE PEANUT BUTTER Cups.

But when she leaves for 3 weeks on Nov 24th to visit her mum (1 week),
then concurrently goes on her 2-week annual Military Drill, this Pumpkin
Pie will be on my agenda--and, by the way, when I showed her the recipe,
she said I could substitute "pumpkin pie spice" in place of the cinnamon,
ginger, allspice, and nutmeg....any of you ever do this?  Bon Appetit  *~*~*
I have totally done that! It's a combo of all those spices, so why not, right - LOL!  Only thing is that there's no way of gauging the measurement - you can't know how much of each spice is in there, so it won't be 100% identical.  But sure, it'll still be delish, no doubt.  Hope ya don't mind my chiming in - you know I tend to do that - LOL

It's probably better to make your own crust. You can veganize just about any recipie from any cookbook. I like to use spelt flour- I find that SAD-eating friends and family cannot tell that it's good for them- and Earth BAlance shortening. THe key to making a good pie crust is to be sure that your ingredients are COLD COLD COLD!!! My mom taught me to put an ice cube in the bowl when I'm mixing the dough.

I've really CHANGED MY LIFE for the better this year...beginning in Feb by starting a self-designed program of diet-change AND exercise to lose 26 lbs in 2-mos and  32 lbs to-date. Dropped from 201 to 169, went from XL shirt to L, and from 38" pant to 32" -- it wasn't until 2-mos ago I decided to go from a full-blown carnivore (my entire life) to Vegan!

So, who knows where Life's journey will take them....best wishes to ALL here ...  Ty-K
As an ADDENDUM to the above, I forgot to mention that all my hard work has paid off medically also. Was diagnosed w/ Type II Diabetes in 2003 & been taking meds twice daily to control it since 2007. Had blood work done during my physical conducted Nov 9th--and because of my weight loss & diet & continuing exercise, the Dr called me the next day (Nov 10th) to say I could stop taking the meds! THAT was my best B-Day gift ever! :-)   Ty-K
I made this last night to try before Thanksgiving.  It was AMAZING!!!  Next time I think I will add more maple syrup or a little agave nectar for a little more sweetness. 
On a side note, I scooped out some of the pumpkin mixture from the crust and added it to my oatmetal this morning.  It added great flavor and protein and will soon become a favorite.  YUMMMM

 Vegan - Oatmeal Raisin  no fat recipe has been added to the forum under new recipes. Also on my page. In the forum It is in 2 parts - The first is additional notes ( was limited to 2000 charactors couldn't fit it all in) and the 2nd is the recipe enjoy.  Ohhhhhhh yes, Alicia, I will try your cookie recipe. My husband is more than willing to be food taster. Side note, when we were married I made cookies, lots of them including oatmeal raisin for our wedding reception. Two days of making about 3 gross of assorted cookies & the next day got married. "Nothin says lovin, like something from the oven" .

Oatmeal Raisin recipe is also on my board in it's entirety. I'm so new at this, I have no idea what I'm doing as far as posting recipes. Hopefully I did it right. I really love this site and feel really comfortable using it.
