calling all vegans, please post.what do you eat?
Green smoothies are great - although I can't afford a Vita Mix - but in colder times of the year it can be hard to drink something cold in the morning! It does take a while to stop trying to 'replace' the meat when it comes to changing your diet - but once I stopped it just opened me up to way more foods. I just try to cram as many vegetables into my meal as are available to me at that time, and to have a grain/rice with the main dish. It's amazing how people's tastes change - a year ago I would have had to force myself to eat raw vegetables, or add vegetables to my meal. Now I feel myself craving roasted peppers, or green leaves or even quinoa...it's great!
I love to eat banana pancakes for breakfast or some tofu scramble with fakin bacon. (breakfast is my fave meal of the day)

Lunch is up in the air but usually includes a sandwich of some sort...almond and jam, faux egg salad.

For Dinner I love Sweet and Sour Tofu over brown rice (with veggies of course) or some veggie tacos.

This morning I did a pretty intense Power Yoga DVD so I was nice and hot and in the mood for a cold smoothie.  I blended some Silk soy yogurt, a little soy milk, 4 strawberries, 4 blackberries, a banana, and get this---- a bowl of salad greens!  I had read in Alicia's book (I think it was) about putting greens in a smoothie so I decided to try it.  I was hoping it would turn out green but the blackberries kept that from happening.  I put it in the freezer for a little bit when it was blenderized- and then it tasted great!  Nice and thick and the greens were hardly noticeable. It's nice knowing I already have one serving of greens under my belt for the day!

Breakfast: Vegan pancakes. Lunch: Vegan BLT with vegan chips Dinner: Salad with lots of veggies. Snack: vegan chocolate fudge pops. :)

b- a berry banana kale smoothie OR toasty oatmeal OR just a homemade decaf cafe au soy-lait
l- black bean soup OR vegetable soup OR salad
snack- a peice of fruit OR nuts OR roasted edamame OR prunes smeared with almond butter OR green beans and hummus 
d- beans, a grain, and a vegetable OR tempeh tacos OR pasta with an arugala pesto soycream sauce OR roasted squash stuffed with nuts and grain 
I like to have different sauces up my sleeve... that way the same ole beans, rice, and veg dish can have variety. 
For me those include tofu savory sauce, red chili tamari sauce, green chili sauce, tomato sauce, arugala pesto, the arugala pesto with soymilk to make it creamy... etc.

brkfst- unfortunately, just a soy latte today

lunch- leftover pasta fagioli and braised swiss chard, sour dough bread

on the menu for dinner- from the book, mushroom pizza (delicious)I actually cook the mushrooms first in a hot oven on a cast iron skillet for 3 minutes first w/ herbs.  also will have barley soup

making alicias delicious caesar salad as my contribution to thanksgiving tomorrow, thinking about making the "favorite cupcakes" too to so I won't be tempted by the desserts.  we'll see if those 2 things will be enough b/c I won't be able to eat anything else!

My son made his famous french fries, he cuts red pototoes in quarters and fries them in olive oil and adds cajun seasoning.  He puts about 3 plates on the table and they last for about five minutes.   Simple but so good!

Today I ate...
Breakfast- a cup of miso soup with wakame, 2 slices organic oatmeal bread toast with earth balanceLunch-salad with mixed greens, sprouts, olives, peas and olive oil and a frozen Amy's non-dairy burritoDinner-1/2 roasted sweet potato, collard greens with onions, gardein "chicken" tenders
So far today...

Breakfast: Apple with Peanut Butter
Lunch: Spaghettti w/ Trader Joe's Soy Meatballs
Snack: Fruit Bar

Still have no idea what I'm having for dinner though.
Still havent bought the book going to try and get it today!  I went off my vegan diet and ended up with a horrid migraine, a sign I need to stick to it! So I put some Irish oats in the crockpot with fruit last night. The kids love it!
I am going to make that chickpea soup that was posted for lunch!
Then head out and buy this book!!
WOW what a breakfast I just had!  I am not (yet) at the place where I want greens for breakfast, but I did just have an awesome yummy vegan breakfast - it took about 2 minutes of prep time and 20 minutes of cook time:

- 3 (1.5" or so) pan-friend cinnamon raisin mochi - one with tofutti better than cream cheese, one with almond butter and fig spread, and one with brown rice syrup.

- 1 Amy's vegan tofu scramble in a pocket

YUM!
I love reading what everyone had to eat, I'm really new to all this and am just going vegetarian w/ some vegan meals. I  worry about lunch, so thanks for all these responses!!
Where do you find the Mochi? I've never heard of it before reading the book. 
Today:    Breakfast... cinnamon banana bread     Snack... trail mix from trader joe's    Lunch... carrots     almond butter and raison sandwich on sourdough bread    Dinner... vegetable tempura (potatoes, sweet potatoes, green beans, and onions)    hot chocolate and more cinnamon banana bread
