I think that this will be dinner for us tonight! Evie has it right - a big salad on the side will make a perfect dinner  - simple, tasty, and good for us. Perfect on a blizzardy day like today is in Calgary.
do you have the nutritional information on this dish?  i'm just wondering how 'bad' this might be compared to regular mac & cheese.  Also, how do you think rice milk or hemp milk would substiture for soy milk (i never drink or buy soy milk)?
Have you tried grated Mochi as the cheese replacement?

ooooo..... i am so making this recipe this weekend!!!  mac & cheese is my absolute favorite comfort food, and i have yet to find a vegan version that fulfills the craving.... i hope this is my lucky recipe!
what about almond milk? do you think that would work? i only drink almond milk cause soy is too hard on my stomach.

I think almond milk would work fine, we use it for all of our cooking.
