Tonight for dinner I made the cuban sweet potatoes, some beans and rice and roasted brocili. Oh my god, so delicious! the sweet potatoes were so amazingly good with very few ingrediants. My husband told me to get more sweet potatoes tomorrow when I go to the store. Yummy, I'm definitely going to make these often. Thanks Alicia!! Now I am waiting for your next cookbook!
Angela -- please tell me what kind of beans and rice you made and how you prepared them? Did you add any kind sauce? And the brocoli - I assume you tossed it on oil and salt and roasted? That sounds like a really well balanced meal! Glad to hear you liked it as i just bought sweet potatoes this weekend and was planning to make in advance for some meals this week.
I absolutely loved the sweet potato recipe! I didn't have parsely or lime, so I used lemon juice. I am sure that the lime and parsely would make them taste even better. I used to put cinnamon & sugar on my sweet potatoes - no longer!
I must agree. I don't think I'll be fixing sweet potatoes any other way for a while now as well! they were amazing! so many recipes in this book are amazing! i'm hooked!
I reheated the rest tonight and they were still really good. They didn't lose any of the flavor. I needed to eat something while making the gingered green beans because they take forever!! (totally worth it though)
