Alfredo Sauce recipe?
Does anybody have a recipe for Vegan Alfredo sauce?  It's one of those things i love and i'm hoping there's an alternative.

I think I may have something for you - I subscribe to a podcast of delicious tv with Toni and one of her recent ones talked about this great new product call MimicCreme. The only store that sells it in my area is an EarthFare but the MimicCreme site has a complete list per state of local retail stores. Anywho, here is a recipe from their site for vegan alfredo sauce.  I hope this helps.  Oh, how I understand a craving...
½ lb. fettuccini, cooked and drained
1/3 cup vegan margarine
2 cup MimicCreme, unsweetened
3 cloves garlic, crushed
½ - 1 tsp. salt
3-4 tbs. grated vegan parmesan cheese

 

Cook fettuccini in a pot of rapidly boiling salted water until al dente. While fettuccini is cooking, melt margarine in large pan, add garlic and allow to cook slightly. Add MimicCreme and whisk until margarine begins to incorporate into MimicCreme. Add salt and vegan parmesan cheese. Heat through, then add drained fettuccini. Serve Immediately.

I got this recipe years ago from Oprah's website.  It is pretty tasty and healthful.
2 cups cooked canelli, great northern, garbanzo, or white beans (fill the cups with beans and add cooling liquid to top of cup);  2 cups plain, unsweetened soy milk;  3/4 tsp garlic powder;  3/4 tsp salt; 1/8 to 1/4 tsp ground nutmeg (to taste);  1/4 c veggie parmasean cheese;  1 c sundried tomatoes (rehydrated by soaking in water, drained, and sliced into thin strips);  2 c small broccoli flowers;  16 oz whole wheat pasta
Boil water and add pasta.  While pasta is cooking, in a blender puree beans (with cooking liquid), soy milk, garlic powder salt, and nutmeg until smooth and creamy.  
When the pasta has about 3-5 minutes of cooking time left, add broccoli and tomatoes.
Drain pasta and add sauce to pot.  Heat and mix in pasta and veggies.
Add parmasean cheese and enjoy.
My husband loves pasta and he says that this recipe tastes even better the next day for lunch.
