Vegan Breakfast Ideas

Hi everyone!

I am looking for some breakfast ideas ... I generally eat oatmeal every day at work with soy milk and cereal with rice milk on the weekends, but I am trying to incorporate more grains into my breakfast (and get away from soy milk on an almost daily basis).  I guess I can't wrap my head around eating things such as quinoa in the morning as that has always typically been a dinner item for me ... I need to switch my thinking from my "old" breakfasts and could really use some help!  What do you all eat for breakfast?  Thanks!

I know you said you were trying to get away from soy milk but you could take the smoothie idea and tweak it a bit. I will sometimes put frozen organic strawberries, half a banana, some protein powder, milk (soy, rice, or almond), and vanilla extract in a blender. You could replace the milk with pomegranate juice or other natural fruit juice like apple juice. I will sometimes pair the smoothie with a slice of whole wheat toast and organic peanut butter.
I have green smoothies every morning and don't use any milk.  I'll use Water or Coconut Water, and ice, along with 2 or 3 fruits and some green veggies...

Oh so good! :-)

Example of one of my mornings: Smoothie had Coconut water, Ice, banana, apple, grapes, pear, dates, spinach, lettuce and cucumber.

the easiest "non-breakfast" thing i've found to have in the morning is quinoa with steamed vegetables (or lightly sautee if you prefer). essentially, i tried to think of vegetables i would normally put in an omelet  and instead of eggs i have them with a grain. if i have to be fast, i definitely enjoy a warm pita pocket with all natural (no salt) peanut butter. but it isn't hard to have a few servings of quinoa with vegetables ready to go in the morning. just make extra over the weekend or at night and store portions in single serving containers. it is hard to change your mindset about what breakfast should be but after a few days of having "regular" food in the morning, you'll notice how much easier it is to make it through to lunch without getting too hungry or tired. it helps to get up, meditate or work out for 25 minutes, start getting ready and THEN eat. having dinner at 6am is hard if you're just rolling out of bed!

I eat the same thing I did before I was vegan - high fiber cereal, no milk.  I eat breakfast at work, so it is easy and convenient.  I leave the box in my file cabinet. On the weekends I eat oatmeal, again with no milk.
I make a mixture of quinoa and oatmeal (1 C of each cooked in 3C of water) then add 1 tsp ea of cinnamon and vanilla; stir in 1/2 C of your fav dried fruit.  This makes me about 5 servings.  so I only cook it once or twice a week, then have the leftovers every morning.  I'm addicted to this!
what is quinoa if you dont mind me asking..lol Im still learning...for breakfast I eat an organic whole grain cereal with rice milk I put blueberrys and a handful of pumpkin seeds on it...it tastes great...
As a treat at the weekend, we have mushrooms (sauteed in Earth Balance) on organic rye toast and veggie baked beans (the Heinz variety Alicia likes... we're Brits, we love them!).  It feels like an indulgence... if you could just added some greens...I think you'd cover all the bases.
Judy, Quinoa (pronounced keen-wa) is actually a seed. Originated in China I believe, thousands of years ago.  The great thing about it is that it is a complete protein with all of the amino acids you would get from eating meat!  Delish-easy-lo cal-versatile.  Eat it by itself as a side dish, use it as a base for salads -- add veggies, use it for porridge for breakfast -- whatever you can imagine you can probably do it with quinoa.  Great stuff!
One of my favorite smoothies is one cup water, one large naval orange peeled. two large handfuls organic baby spinach, one tblsp flax (ground) then I add frozen organic strawberries about 4, blueberries and mango. One frozen half banana to make it creamy and top it off with a nice amount of cinamin. Sometimes I  will add different extracts like coconut, pumpkin, vanillia etc. as well. Blend all ingredients in a high powered blender like a K-Tech like I have which is like a Vita Mix. Do it in the order I stated so it blends just right and doesn't get clogged. Add more water to make it less creamy if you want.  No need to add ice since the frozen fruits make it cold enough. You can switch any kind of frozen organic fruit you like better to change it up.  Make it fun and make it healthy :) Enjoy!
tofu french toast 1 cup of soft tofu drained 1/2 tsp cinnamon 1/4 cup of unsweetened apple juice 1 TBS of maple syrup(or brown rice syrup)        1 tsp of vanilla 3 pinces of sea salt 1 TBS sesame oil for pan 6 slices of sourdough bread 1 cup of strawberries
place tofu, cinnamon, all liquid ingredients and sea salt in a blender and blend for 3-4 minutes until smooth and creamy
pour blended mixture into shallow dish
soak first slice of bread in mixture for 1-2 minutes
heat medium size skillet then add sesame pol
place bread into hot skillet and brown on both sides
top with strawberries and syrup 
we also enjoy mochi waffles and blueberry pancakes

I made the couscous recipie I got from this website, I believe. It has almonds, raisins, baisil, parsley, and quinoa. The almonds and raisins made it a little sweet, which was a nice suprise. I bet that would be great for breakfast!
today I had flax seed cereal with Coconut milk by So Delicious, (Turtle Mountain) with blue berries and banana. yesterday I had brown rice with sauted shitake mushrooms, onions, garlic and sunflower seeds, I buy my shitakes from ta Japanese market, it is so much cheaper than the stores I usually go to.  Can always do steel cut oat meal with fruits and nuts.
I highly suggest the vegan soul kitchen cookbook. It is from an amazing macro chef, and some of my favorite breakfasts have come out of it (namely a porridge he makes with amaranth and quinoa... it is ridiculously delicious!)
also try brown rice with chestnuts for the creamiest sweetest yummiest brown rice breakfast. Just soak 1/4 cup dried chestnuts with 1 cup of short grain or sweet brown rice overnight. Pressure cook the next morning. (you can boil if you don't have a pressure cooker). for the pressure cooker I would use 2 cups water, for a heavy pot i would use 2 and 1/4.
