Big Wheel keep on turnin', and I keep on cookin'!!
Has anyone else noticed this: I think I've never cooked as many recipies from one cook book than from The Kind Diet -book. It must because everything is so yummy, and because the book is also about lifestyle change (not just cooking).

Here's my take on what I've cooked and baked so far...

VEGAN RECIPIES:

Radicchio Pizza with Truffle Oil (p.144)
- good, but I find radicchio is too bitter for my taste

Rustic Pasta (p.147)
- i couldn't quite decide if this dish is more italian or asian

Moroccon Couscous with Saffron (p.148)
- yummy, and good for lunch the next day, veggies tasted cooked not roasted

Pecan-Crusted Seitan (p.154)
- success! , I used the leftover marinade as a pasta sauce

Chorizo Tacos (p.157)
- a huge success!!! , my husband's favourite so far

Alicia's Sexy Inspired Salad (p.174)
- yummy new salad favourite:)

Caesar Salad (p.175)
- good, but nori is something to get used to

Chocolate-Apricot Coins (p.180)
- maybe the apricots I had were small, but less than half of the chocolate dipping sauce was enouhg

Coffee Fudge-Brownies (p.181)
- more like a cake than a brownie, but sooo delicious

Chocolate Peanut Butter Cups (p.183)
- I've made these like four times already!! (like them more with less sugar and butter)

Chocolate-Dipped Shortbread Cookies (p.187)
- I love these!! Wasn't able to bake them into cookie form (too sticky somehow), and there was plenty of left over choc.coating

Quick Date-Apple-Cinnamon Oatmeal (p.196)
- didn't have dates, so used raisins (worked!)
