artichoke, mushroom, and leek crostini with pesto

I LOVE YOU GUYS!!! :D  Hey watch out, don't look now but you're gonna get folks addicted to this stuff...PROMISE??!! :D

I'm still on a total high from seeing you out there on Oprah - how about you, you still feelin' it, being on the show?

I saw this Oprah show and I can't wait to try out this recipe!
My husband is all hot to trot to head to the store to pick up the few ingredients we don't have and make this right away! I love how he has embraced the kind diet! It makes both of us feel so good in every way!
These crostini are so wonderfully incredible, that words cannot describe my addiction for them!!! 
Made them for my FIL recently- a very picky and purist Italian gentleman- in fact, made him a vegan meal!!! (though my hubby put parmigian cheese on the table for those who wanted it)  Even he loved everything!
We had the crostini, the salad with roasted beets, the risotto, some eggplant 'parmigian' stacks, and the peach crumble- so divine dahling!!!

Oh, and yes I LOOOVE THEM - LOL! I've always always been a crostini/bruscetta girl, and I live for a good pesto, so right off the bat I was really drawn to these of course. :) I totally forgot to tell that these are part of what I did with my cilantro pesto awhile ago - a really cool alternative, love 'em both.

And Ms. Laura - my goodness, she's amazing - I've got her in the Truman Show on heavy rotation in my player and that's just the beginning!

I made these over the holidays and they were AMAZING!  People came up to me the whole party to tell me how good they were.  YUM!
These look so good.  Only thing is - I don't like mushrooms.  What else could I use in it's place?

I love mushrooms. I used shitakes to make these. I put the topping on my own home made spelt bread. It was totally yummers. 
I would substitute Salt be unrefined Seasalt.

Just made this last night and LOVED it!  I just finished making the brown rice peanut squares to take to friend's tonight for game night and I'm also going to make the guac dip to take along, can't wait!!!  Thanks for all these great recipes, it's REALLY making converting my husband sooooo easy!

can you all tell me what brands of bread(organic) you use? I'm new to this lifestyle and I'm not sure what breads I can have for sandwiches and baguettes. would love to hear all of your favorites!

Everyone recommends Ezekial bread in the Organic freezer section in your grocery store.  It doesn't taste 100% like bread but it isn't bad.
