Uncooked Greens versus Cooked Greens
Hi Everyone,

I'm trying to eat mostly macrobiotic but I had a question about greens.  I eat greens throughout the day and while I eat cooked greens sometimes, I also really like eating raw bok choy and mustard greens and sometimes even kale as a salad.  Is there a big drawback to eating them raw rather than cooked?

Thanks in advance for any help!!
Hi Dottie.
I don't know of any drawbacks to eating raw versus cooked greens.
Cooking does make them more tender obviously and that may make it easier for some people to eat them.
But, there is very positive info on the virtues of consuming greens raw. Green smoothies are a great way to get them into our diets.  Green smoothies may sound strange, but when you blend greens with fruit and water or juice, the bitterness is masked and it's delicious!

Thanks, Valerie!!  I just wanted to make sure I wasn't missing something crucial.  Cooked greens also seem to allow you to eat more of them since they reduce so much so maybe that's part of it, too?  Anyway - thanks so much for the response!!
