I've never heard of kugel! One of the great reasons to become vegan; I'm constantly learning about new amazing foods! The most recent traditional dish I've veganized is Mac 'N Cheese at Thanksgiving time which turned out amazing. Actually, the whole meal was so great and it had all the traditional fixin's...except we had Tofurky in place of turkey, of course (and I was pleasantly surprised by how good it was!).

I'm tired of being politically nice about these recipes. It's easy to build delicious foods that are fattening with oils, sugars, salts, and refined carbs. I can watch PBS for that and leave out the meat and dairy components. These recipes are all treats.
How about adding more recipes that are based on a "whole plant based diet" that works for everyone. Whole plant based diets are healthy can can be delicious.
I care about the well being of animals, but these recipes are not kind to the human body. Excess fat and sugar are dangerous. Vegan does not equate to healthy.
It's the holidays, Dan -- some of us like to indulge a little. Lighten up. (no pun intended) :)
