Knishes are a New York/East Coast thing. Didn't I read in one of your posts you grew up on the West Coast? Probably why you never heard of them. Not sure I'm down with the pre-made tortilla as the dough wrapper but maybe I'll give it a try! 

These look so good! I've never tried making knishes from scratch, so I'm really looking forward to trying out this recipe!

Love all your vegan recipes just wish there were more gluten free ones I am vegan and also have celiac and find it very difficult to find vegan recipes that are gluten free still love your book!!!

WOW, I haven't had knish since I've been gluten free vegan. Looks so good. Wondering if I can try this with my brown rice gluten free tortillas, instead of the whole wheat ones. YUM!

Oh, these are on West Coast, too. I grew up in So Cal and ate them at Jewish delis or restaurants. I might give these a go. Trader Joe's has some great whole wheat tortillas. I love potato anything:)

HOLY CRAP-those look good. I am not Jewish but an a Knish lover. I use to get tasty knishes from a local Jewish cafe, but they were modly once, and the drinks there are always expired. :( blah, plus they were not vegan.
