I have defintely given up meat, red or chicken. I have had fish a couple times but over 4 weeks, not much. No consuming milk but have had cheese quasadillas from vegetarian restaurant. The issue is that I haven't been eating many vegetables because it takes so long to prepare. I need foods that can be fixed ahead of time and than "ready to eat" to keep me from resorting to Luna bars, peanut butter sandwichs, cereal and bean quasadillas that are expensive. I also realized that I have been eating alot of soy related products too. They just seem to easy to refer to when hungry. I tried the collard green recipe and didn't care for it, tried the rustic pasta and didn't care for it either....
anyone experiencing gas or have some fallback meals that they go to gain sustenance and affords them to try out new things every once in awhile? Kinda like resorting to spaghetti weekly and than trying your hand at the roasted lamb when you are feeling spunky?
Veggies are super simple to prepare...most of them you can even eat raw! Another really easy way to get your veggies is to steam them. I bought a rice cooker that someone on here recommended to me for $13 at Target. It not only cooks your rice or any other grain perfectly, but it has a steamer on the top for veggies! All you do is put water in the bottom, put the veggies of your choice in the steamer, and turn it on for 10 minutes or so. Done done and done! It's so easy, and if you go to local farmer's markets, you can usually get vegetables for super cheap. I went on Saturday to my local market, got four huge bags of produce for $12!! I know it may seem intimidating to cook vegetables if it's something you've never done, but start by steaming them and adding them to your meals that way. Once you are okay with that, then gradually start jazzing them up.
Sounds easy.....okay, I do have a steamer.....
You can also pop greens in a blender with fruit for a delicious smoothie. I'll put the greens that I dont like but are super good for me (collards, etc.) in with some peaches, strawberries, banana and some rice milk and ice and make a delicious smoothie and you wouldn't even know the veggies are in it! Just another suggestion. And steaming is just so simple. I have steamed veggies at every meal, just because it's seriously the easiest thing to do...and tasty too!

I learned that one in college before going veg even crossed my mind! I worked at a smoothie place that would put spinach in their smoothies. At first I thought it sounded awful, but I finally tried it and realized you don't taste it at all and you are getting the veggie in it's rawest and most nutritious form! I've experimented with many different veggies now that I don't like but know are good for me, and most of them you really don't taste a difference. Best of luck to you!
