Amazing Blueberry Muffins
I took my all-time favorite baked good and made it into a macrobiotic vegan treat! I sometimes add ground up flaxseed (about 1 tbsp) so feel free to experiment as I did!

What you'll need:
2 cups whole wheat pastry flour
1 tsp baking soda
1 tsp baking powder
1 tsp sea salt
1/4 cup wheat germ
2 cups unsweetened apple sauce
1/2 cup canola oil
8 oz soy/almond/rice milk
1 cup blueberries

Mix dry ingredients separately from wet ingredients, then blend together.
Add berries, grease pan with soy butter, and cook at 350 for 18-20 minutes.
Makes about 8 muffins.
