We were in the Catskills this summer visiting santuaries and had the best time! It's such a beautiful part of the country, and so many great vegan restaurants!
A few weeks we went to an alligator sanctuary about 2 hours away from where we live (Detroit). It was so cool. Because of my kid's interest in alligators I have really come to love them. Here's a like to our pictures from the trip...

Very sweet. My husband and I just got back from a trip to Costa Rica and we stumbled upon a rescue place near near the Arenal Lake called Lands in Love. They are a family that have bought hundreds of acres and have made a wonderful animal center to stay and play and their on site restaurant is vegetarian. It was such a treat to find the place and take a tour of it and have a great lunch and talk with the chef Naama. I will definitely be going back.
I really had no problem finding vegan options everywhere I went. It appears that Coastaricans understand that fresh foods are abundant and add them to their staple of rice and beans. Such a treat.
Does it make me a horrible person for finding it kind of ironic that the SANCTUARY is called CATSKILL? I'm sorry...
I volunteer at SASHA Farm Animal Sanctuary in Manchester, MI (the largest of its kind in the Midwest). I'm always amazed by the different personalities of all the animals. I've learned the "quirks" of certain critters, and there are so many parallels to being surrounded by a diverse group of people. I pick up and disperse compost from Whole Foods (that would otherwise go to the trash), and it's a learning process who likes what (cows really like broccoli, and goats like leeks, and pigs will go crazy for pineapple...ok, pigs go crazy for just about anything)!
I actually noticed this book has recently been donated for the upcoming SASHA benefit banquet/silent auction, so maybe I'll have to bid on it and see what all the hype is about! :)
Catskill is an amazing place! Thank you for featuring them, they do wonderful work and support so many sweet animals.

Thank you very much for writing this book and giving us so much information and awareness about so many things. I've already made a lot of recipes from your book and I love them all.

We have about 30 more to go up soon....and many more to come this year. Not every sanctuary has chosen to apply yet, so it is not necessarily a "black mark" if a sanctuary is not on the list, but after more time has passed, you should certainly expect good sanctuaries to be on the GFAS (Global Federation of Animal Sanctuaries) list! We have a wonderful place for rescued farm animals in the state of Maryland. It is called Poplar Springs Farm Sanctuary. Check out their web page. They do alot to also educate the public about farm animals. People are always welcome to visit and volunteer at the farm.
Amazing how animal sanctuaries are flourishing here in the US. This weekend, I had the great opportunity to visit Animal Acres (www.animalacres.org) and it was such an experience. I blogged about it in odeisa.hubpages.com
