Like me you probably have some brown rice on the ready in fridge. I whipped this up for breakfast and thought y'all might enjoy it. It would also make a warm, comforting dessert.
Apple Walnut Brown Rice
Serves 1-2
1 cup of cooked brown rice ( I used short grain)
1 golden apple, diced
1/4 chopped walnuts
1 tbsp Earth Balance butter
3 tbsp maple syrup
dash of cinnamon
tsp grated orange rind
Melt the butter in a saucepan. Add the maple syrup and apples. Cook on med-high heat until apples are tender. Add a dash of cinnamon, rice and walnuts and cook until heated through. Top with orange rind. Yummy!
