babycakes cookbook?
Has anyone had any luck with recipes from the Babycakes cookbook?  I made some brownies with chocolate sauce and they were... um.. not good.  Tasted salty and sour.  I'm pretty sure it's me, not the cookbook.  I know it's awfully hard to bake without gluten, so I think that's the problem.  Any recipes you like or had good luck with?  I"m going to try banana bread this week.

I have made the blondies and brownies and they were really good.  Even non-vegan, non-gluten free people loved them.  I made the frosting because I was going to make a cake but I did not like the frosting.  Read their instructions at the beginning of the book about how to follow the recipes.
The biscuits with white spelt flour and the raspberry scones with whole spelt flour are both wonderful.  I have tried 3 times to make the chocolate chip cookies and I give up!  No matter how small I make them, they spread so I get one huge rectangular cookie on my cookie sheet.  They taste good, though.  I was not a fan of the frosting, like Sara.  I intend to make some more things soon.
I have made the blueberry muffins and the banana bread and they were both really good. I haven't made much from it yet though...
I will have to try the blondies! My husband loves blondies!

Okay, my cupcakes were not so good, they also cost about $60 to make them with the crazy expensive ingrediants.  I want to try again b/c so many recipes in there look so good and now I have all these crazy flours and oils to use up.  I also made the banana chocolate chip recipe and the flavor was great but I couldn't get it to cook through well, even though I cooked it and cooked it and cooked it...  I'll have to try the blondies and brownies next.  I'm still hopeful:)
I made the double chocolate chip cookies tonight.  They're pretty good, but I can still taste a little bitter or sour taste. Xanthum gum maybe?  I know, I too bought all the crazy ingredients and want to use them up!  I prefer Vegan Cookies Invade Your Cookie Jar.  Everything in there that I have made is soooo incredibly delicious, but not gluten free.

carrot cupcakes (no icing, I cant' do soy!) were great, rasperberry scones great, vanilla cupcakes with icing (before I KNEW I couldn't do soy!) fabulous, ginger snaps amazing, coffee cake thing - apples involved, can't remember the name - pretty good, chocolate chip cookies were fine but not the best I have made.  Be mindful and follow the directions exactly like she says - and be sure you are using the right measuring stuff - like dry ingredient measuring cups are different than liquid measuring cups.  It makes a difference with these recipes.angela - I was calling my cupcakes the $150 cupcakes because I had to buy a lot of baking equipment (just didn't have stuff) and the weird ingredients!  now that I have it all though, when I make a new recipe I just usually have to get stuff like coconut oil - I have the rest.  Hell, the xanthum gum will last me for a century!!!
I made the banana bread, the chocolate cupcakes, and the Triple Chocolate Fat Pants Cake (that one deserves to be capitalized!)  Honestly, I loved all of them.  The chocolate cupcakes were a bit messed up--for instance, my boyfriend and I used regular sea salt instead of sea salt that had been ground really fine, resulting in some interesting salt tastes.  Also, we did not melt the coconut oil for the chocolate frosting.  Oi!  But honestly still really tasty!

Now the banana bread and the cake....HOLY.COCONUT.OIL.  Amazingly delicious!
Trying the banana bread this week.   Made whole wheat chocolate chip cookies from Vegan cookies invade your cookie jar.  YUM!  And a little healthy right?  My kids like them too.
I want so badly to love this cookbook, but the only recipe I tried (the vanilla cupcakes and frosting) turned out so badly :( The cupcakes were tough-like a dry cornbread and the icing would not set up-it was so runny. I read online somewhere that there may have been a type-o with the frosting recipe and the liquid measurement was double what it is supposed to be. I am going to try again though, I think. I spent around 60-70 bucks on ingredients and based on the reviews that the bakery itself recieves I am hoping some of the other recipes turn out. All the pictures look TO DIE FOR :) Did anyone else have this happen to the frosting?
@ diane--how long did you leave it in the fridge?
Diane-go to babycakesnyc.com. They have a frequently asked questions section and give you tips to improve the frosting.

I've made the raspberry scones, chocolate chip cookies, double chocolate chip cookies, and mint ice box cake-and they were all delicious! I also had some trouble getting the frosting to set for the mint ice box cake but I experimented and made it work! Erin gives some tips on her website that I'm going to try next time though! I love the Babycakes cookbook!

@  Landree-  I left in in for about 24 hours or so. The only thing I am thinking is that maybe I should not have halved the recipe?
