baby's 1st birthday....need a good recipe

my little nugget is turning 1 in a couple months. i'm on the hunt for a yummy but still healthy vegan cake for him to dive into:) any ideas out there??

Hi Deby, check out the blog called Chocolate Covered Katie.  She makes great recipes that are low in fat and don't use much sugar . . . or use agave.  We have made her muffins and cupcakes and they are delicious.  I'm pretty sure she has some cake recipes on there too.  They are probably the healthiest dessert recipes I have found and we haven't been disappointed with anything we have gotten from there!  Good luck and congrats on your baby's first year!  I'm sure it flew by . . .

Mango-peach heaven-cake...

You need:

300g flour

100g rice syrop/sugar

200g margarine

1 little banana

For the topping:

600g soy yoghurt

250-300g soy cream, whippable

3 tbsp fresh lemon juice

water

2-3 tsp agar-agar

75g rice-syrop

1 mango and 4-5 peaches

50 ml orange juice (or multivitamin juice (does this word exist in English?))

1 tbsp corn starch

1. for the dough, squash the banana, mix it with the flour, sugar or syrop and the margarine until it's like a bowling ball ;). I am not sure if the syrop makes the dough too runny - try it out!

Bake in the oven (about 200°C until golden brown)

2. peal and chop mango and peaches.

3. for the topping mix yoghurt and soy cream with the fresh lemon juice.

4. heat up 150 ml of water, add the agar-agar and 75 g of syrop. Once the agar-agar has dissolved, add it to the mixture of yoghurt and soy cream. Add 2/3rds of the fruits, put the whole mixture on top of the (cooled!) cake and put it in the refridgerator for 3 hours.

5. Put 50 ml of juice, cornstarch and the rest of the fruit in a pot, purree the fruits and wait until it boils. Remove from the heat, let it cool for one minutes and put it on top of the cake. Let the cake cool for at least another 30 minutes in the fridge.

Be sure to use a cake sitting ring!! Otherwise everything lands in your fridge ;)
