Black-Eyed Pea Croquettes
I have tried to make these twice and both times when I go to fry them they just fall apart in the oil.  Any suggestions? The picture looks so yummy I want to try them.

Mine did too.  We'll be trying it again this weekend.  My mistake was that I didn't chop it in the processor until it was fine shreds, I made a pulverized it...hee hee.

I've made the croquette's twice and they were FABULOUS! I made sure to really blend it well in the food processor. The first time I fried them in the oil and they were so delicious that I ate the whole batch. The second time I took the suggestion of some Kind Lifer's and baked them at 375 for 15 minutes on each side and they were even better. The key to these croquette's though is to really mix them to a fine grain. Another trick is to add a tad bit of water to the mix if it's too dry (not too much, just a tiny bit). Good Luck!

Success!  One other thing I realized when I re-read the directions...beans are not cooked, they are just soaked overnight.  Ha ha.  We had a good time.  posted pics too.
