Black Eyed Pea Croquettes

I made these today, and yum.  I'm obsessing about this recipe actually.  The possibilities are endless with so many variations you could use with different beans or spices.  My meat eating husband (who has now gone vegan) loved them too :)

OMG!!!! I totally know what you mean! I made the black eye pea ones and they were excellent and last night I used.....Lentils, Fresh sweet corn off the cob, cilantro, water salt and pepper to taste. I blended that up, and same thing fried them in the pan in safflower oil...I could not stop eating them! probably had about 9 of them lol.....I will let you know what else I experiment with. What do you think about like a kidney bean combination???....

That sounds sooooo  good!  I'm dying to get my hands on some fresh corn, and I keep forgetting to buy some at the store.  That would be a delicious combination.  I think you could use any bean really.  I bought some azuki beans because of one of the recipes in the book, but should probably test them out some other way first.  Yes, please do share your new ideas :)

I tried making these the other night and it turned into black eyed pea hash - it was yummy, but they were definitely not croquettes.  I thought I would be able to fry them in a little oil, guess I was wrong.  Did you all use the 1" of safflower oil?

That is so funny. I was reading that recipe last night and thinkign of making it today!

Amy  I had the same problem! Used 1" of safflower oil... haven't attempted to make them again :(

I didn't actually have safflower, but used organic canola I believe. I think you just need to make sure the consistency is right by not processing them too much or too little, and making sure to use dried beans instead of canned.  I was a little worried about the recipe because others on the forums said they had trouble.  I've made falafel before, and this is basically the same, so it worked out this time for me. Makes me want to make them again :)  Yum!

I made these last night.  I added more herbs from my farmers market.  I had basil, lemon basil, and Thai basil.  I made sure I has enough oil and that it was hot, hot, hot.  When I put the four croquettes in the oil, I made sure not to touch them until they started to crisp.  These were SO good.  BIG hit with my omnivore husband!

Made these last night. They tasted good, but I feel like the beans should have been cooked first? They were just a little too crunchy for my taste.

They will hold together better if you squeeze some of the moisture out when forming the croquettes and then put them in the fridge for half and hour or so to let them "set".

 

Mine held together fine. Maybe you didn't soak the beans long enough? To me these are very much like falafel. Joy of Cooking's falafel adds 2 T. of flour at the end, and then suggests letting them sit for 15 minutes. They also have 1/2 t. of baking soda which may hold them together as well. I didn't find the croquettes too crunchy except for the outside being crisp. I'm not usually a fan of cooked beans in recipes like these, but I think that is a personal preference. I have tried canned beans in similar recipes, but they are always a little mushy for my tastes.

you aren't supposed to cook them?  I guess I didn't read it thoroughly enough.  Mine always turned into mash as well, but I kind of turn it into refried beans and put in a burrito.  I actually add the mustard and some mollasses to the mixture and fry it.  It's a fav of mine, but I want to make it how it looks in the picture

This is definitely my go-to recipe when I'm cooking for someone who's not a vegetarian.  :)

If you follow the recipe exactly, the end result is way too bland.  I added lots of garlic, green onions and lemon juice.  I also doubled the shoyu, cumin and parsley.  Definitely something to please even the meat eaters.

I'm definitely making these tonight! OK...just to clarify--just like Kaetlin I'm confused...you don't cook the peas? Just soak them?

No you don't cook them, kinda weird, but I'm making them right now, we will see how it turns out ;)
