Black-Eyed Pea Croquettes

Help!! I have not idea what went wrong, I made these from the Kind Diet book a few times. The first time they came out great. The second time some where great some fell  apart but they cooked and could be eatten. Tonight I made them and they fell apart, were total mush and had to be tossed. Not sure if I over processed the beans or what, anyone know?? The only change between the batches was the first time I used my blender and they all got stuck, so I used the food processor but thought I did ok with not over processing. Ugh!!

Thanks and have a great evening!

Any help kind lifers?  I haven't made this yet, but I wanted to this weekend.

Try adding a flax "egg" to the mixture once it's processed (Whisk 1 tbsp ground flax seeds with 3 tbsp warm water and let it sit for ~5 min, the texture will become slimy, or egg-like) It acts as a binding agent. Works everytime!
