Brown Rice Tabbouleh with Tortillas and Guacamole
I just tried this yesterday, and it was soooo good!  I think any kind of whole grain would work in this.  I also served with black beans, but garbanzos would be great as well.

Tabbouleh
1 cup cooked brown rice
2 tbsp fresh mint chopped
2 tbsp fresh parsley chopped
3 scallions sliced
1/2 cucumber diced
Juice of 1 lemon
Sea salt and pepper to taste
Whole Wheat Tortillas (I used spelt)

Guacamole
3 ripe avocados
Juice of 1/2 lemon
1 garlic clove
1 tbsp onion
Sea salt and pepper to taste

Cook rice and cool.  Add mint, parsley, scallions, and lemon juice to rice and mix well.  Season with salt and pepper.  Chill.

For guacamole, mash avocados in bowl with fork.  Add remaining ingredients and mix well.

Serve with warmed tortillas.
