I just got back from camping with my parents who were visiting... my dad and step mom both used to be vegan/vegetarian due to health (my dad having cancer) they have gone to eating chicken only and some eggs. But my dad has a hard time with dairy still. But because of me we ate vegan all weekend which was great, i can give you what we fixed while we were out camping which turned out to be easy and very delish.

We had brought a bunch of zuccini, patty pan squash, onion, carrots we would cook these up and add some spagetti sauce (vegan) and had cooked some risotto/brown rice. we did this for two meals we alternated with the risotto or whole wheat spagetti noodles

Lunches we would take slices of bread and we made out own hummus topped the bread with the hummus and some slices of avocado which i loved surprisingly it was lite but very good.

now as far as veggie burgers i found i like the yves brand veggie burgers. I dont know where you live so not sure if these are available to you.

but i hope that helps you a little.

Thanks! I only went for one night and I just brought hummus and pita bread and some corn to munch on. I will definelty check out the Yves brand veggie burgers, I'm in Long Beach, CA and I have had pretty good luck around here finding veggies items so hopefully I can find this brand. Thanks so much for your help!

Amy's Texas Burgers are my favorite!  Also, easy and quick for lunch are Tofurky Peppered "Turkey", Vegenaise, and all the veggies fixings!  Thats what I always love to take camping!

I just bought BOCA vegan veggie burgers. I also heard (though I haven't yet tried them) that tofurkey dogs (like hot dogs) are really yummy! Good luck and have fun!

I always prepare some beans and pack them up, reheat them over the fire, and have wraps on hand for burritos... You can bring salsa, daiya cheez, avocado, whatever really to make them delicious... Veggie burgers are great (I LOVE Amy's Bistro burgers, they're gluten free too!) and make a huge thing of quinoa taboulli, or coleslaw, then already have some corn wrapped in foil to throw on the fire.. For lunch I bring some tempeh of tofu salad, maybe throw some leftover quinoa taboulli in there, and make a wrap... If you want a dessert, try making "banana boats".. Slice a banana in half lengthwise, and then stuff it with peanut or almond butter, choc or carob chips, nuts, maybe vegan marshmellows, then wrap them in foil, put them near the fire, and let them heat up until the inside is warm and the banana is gooey... Delicious!

Wow thanks for all your ideas! I am actually going camping again next Wednesday through Saturday to Devils Pilepost near Yosemite! Never been but heard its BEAUTIFUL! By the way, a few weeks ago I went camping, or what I thought was camping to La Jolla's Indian Reservation in Pauma valley, umm...don't go people. Its so sad how people are so willing to trash and destroy a beautiful reservation like this one, I couldn't even get myself to go in the river because there was TOO much mysterious foam. People be kind to our environment, we only have one!smiley-laughing.gif

Quorn brand chicken cutlets, with hotwing/bbq sauce. Make a tin foil packet with baby yukon gold potatoes, onion, zukes and mushrooms, or whatever veggies you like. We like Morningstar farms black bean burgers the best. The Quorn brand chicken patties are also very good. I've sent them to school in a whole wheat bun and a whole wheat wrap.

Sunshine burgers are my fave store bought burger - they are minimally processed, no soy, compare their ingredient list to most others and you might be surprised. Also, if you are vegan, be careful about veggie burgers because many of them have cheese or eggs in them.
