make sure to read the label if you buy galaxy! not all their cheeses are vegan.
those cheeses are good for melting, but if you're looking for a good snacking cheese, you have to splurge and get some dr. cow's cashew cheese. it's a little spendy, but a great once in awhile treat on some crackers!
This post made me want to share my vegan blog because I based the title off of Mississippi Mud Pie. It's such a yummy dessert and I understand the want for fried food (Southern girl here in case you can't tell). Here's the link:
I like Daiya. Galaxy is also good. They have a Veggie Shreds and a Rice Shreds. I prefer the Rice Shreds mozzarella. Melts real nice.
That mud pie looks amazing.
I buy Daiya cheese on sale and keep it frozen. That way I always have some fresh on hand!
You can't go wrong with Daiya. It tastes best when melted or cooked. My trick for using it on a sandwich is to put 1/4 cup of cheese in a nonstick skillet and cook over medium heat for 3-4 minutes, then flip and cook for a couple more minutes. It gets crispy and tastes great. Then you can slice it and put it on a sandwich, in a wrap, etc. I even roll the cooked cheese strips up and put them on my salads as a "cheese crouton". Daiya is fine. I thought Follow Your Heart was .... what's a nice way to say horrible? Pretty bad, actually. Galaxy, I've only had the parmesan sprinkler one but didn't like it, didn't hate it either though.
I love the Galaxy products! Not impressed at all by Daiya...I make a crazy good "mozzarella stick" with the Galaxy Rice Vegan Mozzarella block!

I have been trying more raw desserts lately. I have a major sweet tooth so it's awesome to have some healthy options that wont pack on the pounds but are still so delicious! Homemade raw balls & raw ice cream are wonderful :)
I've really been enjoying Purely Decadent's Coconut Milk Ice Cream. Particularly the chocolate peanut butter flavor.
I made the mistake of getting the Galaxy rice shreds that were NOT vegan, so be careful because they make both vegan versions and ones that have casein in it! The stores I go to don't carry the vegan ones, so I stick with Daiya.
LOVE Daiya cheese, mmm...Also Follow Your Heart - Mozarella is good cubed or shredded first, then melted. Nacho and Cheddar flavors are delicious - melted tastes a little better (pizza, nachos, tacos, etc.). Teese brand cheese is pretty good also. Pizza Luce (restaurant in St. Paul and MPLS) makes their own Rinotta cheese and it is HEAVENLY!
Galactic Pizza (restaurant in MPLS) has THE BEST vegan cheesecake I have EVER had -- tried if for the first time last week and oy - DELISH!!! :) This mud pie looks delicious also!

I don't have any advice for chicken other than maybe use seitan.
Whole Foods makes a rockin' vegan apple pie that is terrific warmed up with a scoop vanilla coconut ice cream. Fabes Bakery and Wholly Wholesome both make vegan pies as well, and can be found in most health food stores. Wholly Wholesome makes a dairy based pupkin pie as well as a vegan pumpkin pie, so check the ingredients before buying. It looks like Fabes Bakery has a couple of Non-Vegan pies as well, so as always double check the ingredients.
The problem with vegan cheese is that none of them are organic. I eat mainly organic so we have to do without cheese because none of those companies makes an organic vegan cheese. :( I'd rather not eat it if it's not organic.
AC DF have you checked out the Uncheese Cookbook? You could probably make your own organic cheese substitutes.
