Every Halloween, I make sugar cookies cut into pumpkin shapes. This is my first Halloween as a vegan and decided to use the recipe for the shortbread cookies in The Kind Diet. I made the shortbread cookie recipe and topped them with a vegan buttercream frosting. It was so good, I couldn't even tell the difference! I feel better knowing how much healthier they are than the original recipe I used with eggs and butter. I'm so glad I found this recipe in Alicia's cookbook.
