Chocolate Dipped Shortbread Cookies

Every Halloween, I make sugar cookies cut into pumpkin shapes.  This is my first Halloween as a vegan and decided to use the recipe for the shortbread cookies in The Kind Diet.  I made the shortbread cookie recipe and topped them with a vegan buttercream frosting.  It was so good, I couldn't even tell the difference!  I feel better knowing how much healthier they are than the original recipe I used with eggs and butter.  I'm so glad I found this recipe in Alicia's cookbook.  I have a picture but I'm not sure how to put it here.

They are seriously good!  I made them with no chocolate or icing for my daughter to take to a tea party, and they were a huge hit.  We also took pumpkin scones from Veganomicon.

Hmm, may have to try these!

I loooove these cookies, I make them all the time, some with vegan chocolate chips and other times without. I find it's good to have around if you need something quick to eat or just to carry in your purse as a snack if you'll be on the go for a bit :)

Okay mine turned out dry and tough....I'm an avid baker, so I know not to overmix dough.  The uncooked dough itself was wonderful!  Also, the chocolate dipping wasn't working either, as I would dip the cookie and the chololate would roll right off like oil and water.  So I just took a spreader and spread it on top of the cookie like icing.

Any one else have these issues?

I love these cookies. Sometimes I have to spread the chocolate but iI don't mind. Usually it starts off where I can dip them fine but I think as the chocolate cools down it creates the issue you mention. I love these cookies and make them all of the time. I only make half the amount of the chocolate though. I shape mine like hearts and dip half of the heart.

Have any of you substituted any of the flours?  I didn't have brown rice flour so I used half a cup extra of unbleached flour and half of spelt.  I read on there that you can interchange them.

Wondering if not having brown rice flour is what caused the issue....

I'm also wondering how many different types of flour I need to keep!
