coconut oil?
So coconut oil.  How do you use it?  I know it can be used for just about anything -- from cooking to skin -- but I'm a little overwhelmed!  What do you think?  

It's good for cooking up to medium-high heat. All I've used it in cooking so far was some banana fritters (recipe in 500 Vegan Recipes). Really couldn't taste coconut at all. I have used it occasionally in my hair, but need to shampoo after or else it's greasy. Or leave it in overnight wrapped up and wash the next day. It's really thick, but if you're in the shower  you can just scoop out a little and rub your hands together and it liquefies pretty quick. If you google it, you'll find a bazillion websites touting the benefits.

I don't use a lot of oil generally, but the two things I do use coconut oil for are stir fry veggies, (just spoon out a little and melt in the pan), and in making my homemade granola which is awesome! Spoon a little into a glass measuring cup and gently melt in microwave, I use about 1/3 cup to about 4 cups of oats. It does not really taste like coconut, but there is just a hint. I would also be good in things like baked goods, pancakes, etc. Just melt and use as oil.
Coconut oil is the perfect replacement for butter in baked goods, things come out wonderful and moist, and not too much coconut taste at all.  The Babycakes cookbook has loads of recipes that call for it, from cupcakes and icing to cookies, scones, cake... yum.

Yes - babycakes cookbook got me using coconut oil - it works great in baking!
cool, guys!  thank you so much -- you've given me a jumpstart!  I think i'm going to use it in my granola bar recipe tonight.... ill let ya know how it goes!

Yeah, coconut oil is so good for you! It is very healing to the thryoid gland.
I sometimes just toast a piece of whole grain or ezekial bread, and spread it on it like butter, with a pinch of cinnamon! Its so good, like a treat!
