College Student Starting!
Hey everyone, I have been a vegan (but a really junk food vegan) for the past year. I just read Alicia's book and I'm super motivated and want to start out as a superhero. I have a few questions and concerns though, hoping you all can help me out :)
I'm confused about what to have for breakfast? I really like oatmeal but I can't really tell how good it is from the book? My breakfast options are limited because I am a college student...suggestions?
Also, its pretty hard for me to get the exotic and seaweed foods into my diet because of my dining plan. I do have a car and can get some things. But does anyone have any recommendations for paticularly important ones?
I've read a lot about the soups and they seem like a great idea, but I have no way to make miso soup...are there any brands of soup I could buy and make with boiling water?

I have trouble eating greens for breakfast, so I stick to oatmeal myself.  I use plain Quaker oats so I can add my own salt and sweetner.  Also, a great breakfast for me is a banana, it really fills me up.  You can buy organic instant packaged Miso soup, and add boiling water to it, however, packaged food is loaded with sodium...Good Luck :)
I'm not sure about what to do for sea vegetables; I'm a college student too, but I live off campus now, so I'm trying to think about the residence hall situation.  I only eat a little bit of sea vegetables, too: I bake nori to make seaweed chips (if you like chewy things, you can also eat it straight from the bag) and occasionally get vegan sushi (I just go to a korean restaurant down the street, but some grocery stores like Kroger also carry it).  The only problem with the sushi is that it's usually made with white rice, plus I really don't know all the ingredients (seems pretty straightforward, though).  Maybe you could make your own?  
I don't know if any of these options would work for you - some residence halls have ovens, but mine didn't.  If you can bake seaweed, you can crumble it up over rice or other foods to add a salty (seaweedy) flavor.  
As for breakfast, if you have access to a blender/food processor, you could have fruit shakes with flax seeds.  Like Tracy said, bananas are nice in the morning - if you can, maybe you can take a banana or other fruit from the dining hall every night for your breakfast the next day.  There's always granola and nut milk, too, or snack bars like Larabars (raw, sprouted grains, fruit, etc.).

Hey, I'm a college student too - but not a superhero...however I never eat processed vegan foods, mainly because I didn't think that they sold them in the UK and secondly because I live in an apartment and we have our own kitchen (thankfully). For breakfast I usually eat bananas and dried fruit and nuts - all of which can be stored easily or in the UK they have Naked bars - pretty good and packed with yummy things.
My dad packed me off to college with about thiry packets of instant miso soup and claimed it would keep me alive!! hahaha, it did - I just add more dried seaweed to it and sometimes have that in the morning. Or whenever I go shopping I grab a fresh juice or smoothie and drink it whilst i'm browsing.
When I was small my nana used to mix oats with soya milk / water, sweetner - she used brown sugar but I use agave sweetner, and various fruit and bake it. She called it porridge cakes and they were surprisngly good - I still make them. They can be carried around and keep for about two days.

you don't need to instant miso soup if the only ones you can find are full of other stuff - if you have access to a fridge, just get a container of real miso and in the morning mix a spoonfull with very hot (not boiling - you will kill the good stuff!) water - instant non-instant miso soup!
hi i'm a college student too. i try to eat as superhero as possible, but some things (umeboshi plums, sea veggies, etc.) are pretty much out of the student price range, lol. i don't think i necessarily eat superhero, but i hardly ever eat processed vegan foods. breakfast: either rolled or steel cut oats & you can add lots of things (bananas, dried fruit, nuts, pumpkinnn, peanut or almond butter) i never get tired of oatmeal! i know alicia says in the book to try to eat greens in the morning, but it's still just really unappetizing to me. plus i make up for it later in the day :)lunch: i usually have soup and/or salad. + hummus.dinner: it's usually brown rice or quinoa with veggies (broccoli, carrots, cauliflower, squash, etc.) and some form of protein (tofu or chickpeas or black beans). sometimes whole wheat pasta. cheeseless pizza with lots of veggies. veggie sushi rolls made with brown rice. etc.!
other things i like to eat are smoothies, miso soup, apples, pickles, popcorn...
i'd say the most important/versatile superhero thing would be to get seaweed. like others have said, you can bake it & sprinkle it over random foods.
oh and miso soup, i either make it myself with a container of miso paste but i prefer using instant miso packets because it tastes better :p
