Crispy Peanut Butter Treats

My kids and I LOVE the crispy peanut butter treats from your book with a slight change to the recipe.  I cut the brown rice syrup back by at least 1/2 cup and add a little more peanut butter and a cup of oatmeal.  With the oatmeal mixed in, the crispy rice stays crispier.  I guess the oatmeal soaks up some of the sweetener.  So there's less sugar, more protein and whole grains!

Thanks for that tip!  I'll try that next time because I thought there was too much syrup anyway.  Oatmeal sounds like a great addition, too.  :)

Dumb question....do you cook the oatmeal first?  Rolled oats?  Steel cut?  I made the pb treats last week and I accidentally used brown rice puffs!  smiley-embarassed.gif It was also way too sweet, so I will cut down on the syrup next time.

No, not a dumb question...after submitting the post, the thought crossed my mind that I should have included that info.  I use uncooked Coach's Oats but rolled would work just the same.  Coach's Oats are just cut a little more than rolled oats.  Not sure about steel cut...might be too hard to eat uncooked.  And I also used brown rice puffs the first time I made them!  Bought them by mistake thinking they were the crispy rice.  I thought they were much better with the crispy brown rice.

The oatmeal idea sounds terrific. I also thought there was too much syrup. It created a layer in the bottom of the pan. My kids liked these, but the extra syrup made them so sticky that we couldn't travel with them as the book suggested.

I just thought I'd share that I made these again with only 1 cup syrup and 1/2 added oatmeal and a little more peanut butter, and they were SO much better!  They actually stayed in bar form and had the perfect amount of sweetness.  Thanks for the suggestion!  YUM!

Ooh, I made these today! I was going for 1/2 a recipe, but added more cereal because still it was a bit sweet :O but the cereal and healthy extra spoonfulls of almond butter mellowed it out :D

I made the almond raisin bars, and they are soo delicious. Has anyone tried it with crunchy nut butter?

I love the idea of adding oats!  I have made these several times and never thought they were too sweet, but why not add more healthy stuff to them?   :)

I wanted to update anyone who loves these treats to a new variation I tried -- and love most of all.

3/4 cup brown rice syrup

3/4 cup almond butter

pinch salt

teaspoon vanilla

teaspoon cinnamon

1 box brown rice crispy cereal

The cinnamon and vanilla make it so yummy!  And cutting the syrup down even more worked very well.

I used to make cookies with oatmeal like this a lot in the spring,when I was overhiking,overdepressed,you name it.I'd put in carob chips,coconut flakes,cinnamon,ginger,nutmeg,carob,almond butter,agave,almond milk,raisins..simply addictive! Good reason not to make them anymore,a whole batch doesn't digest well!
