Crunchy barbecue wraps!
So, I was cooking up a delicious vegan meal last night and want to share with everyone! So, my family (which consists of two grandparents and my lovely spouse) were having greasy, crunchy barbecue chicken wraps. I am the only vegan in my family. Now, I missed having some friend crunchy in my diet. SO, I made this up and it was AMAZING. So amazing, I had to pass onto you guys. Now, keep in mind - I don't think this is superhero but it definitely hit the spot when I was feeling a little weak. And, I didn't slip AT ALL on being a vegan! Such a feel-good comfort food. I hope you enjoy!

Crunchy barbecue "chicken:"
Serves 4
1 package of frozen "chicken," I used vegan Morningstar meal starters chicken strips. Be careful though, most of Morningstar's "meat" is not vegan - they use egg whites to hold the product together.
1 cup of whole wheat flour
1 cup of cornmeal
generous sprinkling of nutritional yeast
1 cup of rice or soy milk, (I used rice.)
1/4 cup of safflower or olive oil.
4 spinach wraps
Veggies of your choice

Directions:
Thaw the chicken and cut into semi-small pieces. My strips were about 1/4-1/2 inch. In a medium-sized skillet, heat about 3 tablespoons of the oil on medium-high heat. Place milk in a bown and place the chicken inside. Take a large paper lunch bag and fill with the flour, cornmeal and nutritional yeast. Shake the bag to mix the ingredients. Take a couple of spoonfuls of the chicken, drain to make sure no excessive milk, and place into the lunch bag and shake until evenly coated. Place the coated chicken into the frying pan and cook until crunchy on both sides. Finish cooking all of the chicken and then coat in barbecue sauce or just drizzle on your wrap. My wrap had vegenaise, the chicken, lettuce, tomato, peppers,  mushrooms and a spicy mustard! Delish! Since I am the only vegan at the table, I saved the chicken and threw it on a salad the next day!
