Day 1 almost done!

Hello!

I don't intend on chronicling EVERY day haha That's crazy. But I just wanted to reflect on my first day.

I'm slowly weaning myself off certain foods that have been staples in my life. Namely cheese. I will only be eating it once a week, if that.

Sugar will be tough! I did get 6 dark chocolate covered almonds.

But everything else is going well! Lots of veggies and whole grains.

I need a substitute for eggs though! Before reading the Kind Diet, my bf and I bought a lot (because we love breakfast wraps) so I'm kind of stuck!

It's been a wonderful challenge and it feels easier to do because there's purpose behind it. It's not at all about losing weight, it's about making healthier choices because as an athlete, I want to feel my best and perform well in my life!

Congrats, you're doing awesome.  There are different kinds of substitutes for eggs.  In baking you use other binders and leaveners like flaxseeds and water, energ-G egg replacer, applesauce or bananas or baking powder/arrowroot. 

BUT for yummy scrambled eggs make SCRAMBLED TOFU!  Its so good and makes a really easy quick meal.

I'm sure you can find more recipes.  You can always change it based on what you have in your fridge/pantry, but I found that it helped to get the general process and flavor by following a recipe the first time.  I used the first link by Isa Chandra Moskovitz because she is awesome.  If you make it for wraps you can make a bunch of it and just use a little each time you make a wrap.

I'm looking forward to getting shopping and actually getting some stuff so I can really start going on things, but it might be a bit before I can completely makeover my fridge and pantry!
