Dinner for one

My spouse has recently started working 2nd shift at times. Which means instead of cooking for us both (he a meat eater, myself going meat-free) I'm suddenly cooking for myself. Any easy suggestions for simple dinners? It's been rainy and cold lately so if part of it is warm I'd be very happy :)

I love making a sort of veggie chilli with lots of mushrooms to bulk it up and any veggies I have on hand.  Lately I've sprinkled with nutritional yeast as I've just discovered that .... then I top it with avocado mashed up with lemon juice!  Maybe even some taco shells too.  Just delish. 

You, my lady, have some tasty ideas! But I ended up with some veggie meat-less yummy stuff. I just need to read up more on what to make for easy yet good meals.

I love to make Beans and Greens when I am feeling chilled.  10 minute prep and you can save the left overs (if there are any) for your hubby when he gets home.  My hubby likes meat as well so I add ground turkey to his soup.  If you are interested in the recipe you can find it on sproutingsouls.com  :)

I am the only veggie in my house, everyone else eats yucky animal products. I make A LOT of stir-frys for myself, throwing in onions, mushrooms, garlic, brocoli, zuchini, snap peas, whatever you name it! I do a dry fry, no oil at all. Add some beans and grains and you're good to go, throw left overs in a tupperware and you've got two meals! My stir-frys usually take 20-30 minutes from start to finish, and they are delish!

Stir frys! That is a perfect meal, I love those! My hubby is kind enough to try my meat-free alternatives and he actually enjoys the Morning Star Farms type.

I got an awesome hearty, spicy lentil soup recipe from this board once.  It is so quick.  It is my go-to in a pinch.  In a pot, add 1 cup red lentils (must be red), 1/4 tsp cinnamin, 1/4 tsp tumeric, 1/4 tsp (adjust depending on how spicy you like things) cayenne pepper, 1 tsp cumin, 1 tsp seasalt, 1/4 tsp black pepper.  Cover with 4 cups water and boil until lentils have porridge consistency (40 min roughly).  When done, dice and sautee a yellow onion and add it in.  That's it.  If you want to be fancy, garnish with fresh cilantro.  So yummy, and satisfying on a winter evening.

Oops, forgot to add, this makes about 4 big bowlfuls.  But, it keeps nicely in the fridge for several days.  Just add in a little more water when reheating.

Every response describes me exactly. Stir-frys and lentil soup are also my go-to meals (especially since they're so easy to make and store for later). But, of course I get tired of the same old thing. I recently started working with the social media team for Wasa Crispbread and tried them for the first time as a dinner and snack. Fell in love with them! They're flatbread that you can top with pretty much anything, but for dinner I'd recommend toasting garlic, parmesan, and some herbs on top of Wasa in the oven for 5 to 7 minutes. Or making some chili and crumbling Wasa on top - more filling than regular crackers and fewer calories than bread.
