Dinner guests! Need a fabulous vegan & macrobiotic recipe!
So I am making dinner for one of my friends who is interested in becoming vegan/macrobiotic so I want to make something super delicious and really yummy!!  I have loads of great vegan recipes but am trying to show more of a macrobiotic meal - I am also avoiding nightshade vegetables so it's somewhat challenging.

I want to have a few good recipes I can make for other people so they can see that it's so easy and yummy and FUN to eat this way!

Any suggestions for dinner? 
You could do a brown rice risotto with leeks, mushrooms and peas and sprinkle with almond "parmigian" cheese.  Do you have either tal ronnen's cookbook or veganomicon?

get the veganomicon and do the white bean cassolet with biscuits baked on top - I think I might mention this dish in about every post I write!  everytime one of you make it, I am sent a check for $2.....ha!
Yum!  Those aound great.  I ended up making sesame ginger baked tofu, ginger mushroom quinoa and roasted napa cabbage and brussel sprouts.  So delish.  Very filling, but didn't stop me from diving into the bag of vegan chocolate chips. :O
