I need to give dandelion greens another chance. I can't seem to balance out the bitterness correctly.
I like dandelion greens with fresh kale, raisins, sunflower seeds and Soy Lemon Tahini dressing (at Whole Foods in the produce/refrig. section). Make the salad the night before you are going to eat it and let the flavors soak together and soften the kale. A nice way to balance out the bitter!

Recently, I have been falling in love with flowers from this time of year. I am researching flowers for my wedding (September 2011) and found a farm here in NY that comes to the green market at Union Square. The vendor is The River Garden out of Castkill, NY and they have gorgeous flowers!! They have zinnias, cockscomb, snapdragons, salvia, ageratum, celosia, and globe amaranth. I think my bouquets will be pretty kick ass! :-)

My favorite flower for eating is the Pansy and I really feel that this little flower was misnamed because it is no pansy. They will still flower and have flowers after being burried under 3 feet of snow. I was very impressed to see it in my dads garden. My second favorite flower is of course the Rose and I named my daughter after this flower as well I always thought it was a great name for a girl not to mention not wanting people or kids for that matter to be able to make fun of her name like they did for me.

I haven't used edible flowers yet in any dishes. I'm going to be trying them in some dishes soon though because they look oh so beautiful. I live in Wisconsin so our growing season is over with so we don't have any cool edible flowers in our area.......I'll have to check out some of the local supermarkets. Thanks for the really cool ideas!!
