Freezables

My schedule is crazy busy, so I find it really hard to eat anything but convenience foods.  I was hoping for recipes that freeze well or tips on how to freeze.  I try to stay away from Gluten, but any that you have would be great.

Yes cooking vegan can be time consuming sometimes.  You can freeze some brown rice (http://justbento.com/handbook/bento-basics/how-freezing-preportioned-rice) and beans freeze well too.  Also veggies (carrots, brussel sprouts, winter squashes, pumpkin) all freeze, but make sure you precook them.  I've also frozen some lentil loaf as well.

Hi Talia,

I often find myself in your situation, especially during busy work weeks! I tend to make a large batch of soup (butternut squash and sweet potato is my favourite) and freeze it in individual portions. I also make slightly more filling meals such as a mixed bean chilli or goulash, and freeze those in portions too.

My recipes are usually improvised, but as a guideline, for chilli I'll brown a chopped onion and a garlic clove, add some chopped peppers and sweetcorn, then add the herbs and spices (usually chilli powder to taste, 2 tsp paprika, 1 tsp cumin and 1 tsp oregano) and allow to cook together for a few minutes. I then add either soaked or tinned mixed beans depending on how organised I've been, and a tin of chopped tomatoes, or chopped fresh tomatoes with a bit of vegetable stock if I have the time, and simmer for 30 mins to an hour so the flavours can infuse. The goulash recipe is very similar, but instead of the mixed spices I add 2 tablespoons of paprika. I serve them both with brown rice, or sometimes I serve the chilli with quinoa. They're both really easy to make, even on a work night! I freeze them in old takeaway boxes which is a great way to re-use them. Hope that helps!
