French Toast (egg replacement?)

How do I make vegan french toast??

There are recipes with tofu, but I like to minimize my soy intake.  A great soak for french toast is almond milk with mashed bananas and vanilla extract.  This works best on a thickly-sliced bread, like sourdough.

I'm pretty sure there is a recipe in Vegan Brunch by Isa Chandra Moskowitz, the almond milk with banana sounds like a great idea!

This is my favorite from the Chef Chloe Blog....(sorry for the bold - can't get it off)Blueberry Cinnamon French Toast

 Serves 6-8
Ingredients:
Warm Blueberry Compote
2 pints blueberries
1/3 cup agave or maple syrup
½ lemon, juice and zest
1 teaspoon cinnamon

Cinnamon French Toast
1 loaf French or whole wheat bread
2 cups flour
2 cups non-dairy milk (I use almond)
3 tablespoons maple syrup + extra for dipping
2 teaspoon vanilla
1 tablespoon cinnamon
pinch of sea salt
2 tablespoon canola oil
powdered sugar for sifting

Procedure:
Warm Blueberry Compote
1.    In small saucepot over low heat, combine blueberries, maple syrup, lemon juice and zest. Let simmer for 10 minutes, or until mixture is soft and syrupy. Set aside.

Cinnamon French Toast
1.    Slice bread into ¾” thick slices.
2.    In medium size bowl whisk flour, milk, maple syrup, vanilla, cinnamon, and salt.
3.    Heat oil in large non-stick skillet.
4.    Submerge each slice of bread in the batter to coat, and then heat on skillet. Flip French toast and cook until desired crispiness. Repeat this process for every slice of bread.
5.    Serve French toast topped with sifted powdered sugar and the blueberry compote.

Dolores K is right!!! I make this recipe all the time...My little girl comes running to kitchen because it smells so awesome!! It's a quick and inexpensive supper too...you can spread raw almond or peanut butter on it for a change...I substitute whole wheat flour and add a little extra almond milk.

@tlcv, I tried the pumpkin french toast from Vegan Brunch over the weekend (in a Thanksgiving mood, I guess), and it was no where near as good and easy and the Chloe recipe.  Despite all the spices added to that recipe, it was bland.  I will have the try the Chef Chloe one with almond butter on it - I love anything with nut butters on it!  smiley-tongue-out.gif

I make a french toast using chick pea flour, I love it and so does my omni hubby. Its the Fronch Toast recipe from the Vegan with a Vengence cook. I also really like the vegweb website for other fun recipes. Go to your library and check out some cookbooks, its so much fun to try new things.

I'm definately trying the Chef Chloe recipe next time I have some down time.

If you're in a hurry, you can just soak the bread in plain maple syrup (I prefer grade B, tastes like maple instead of sugar water). Then grill it up, as simple as that! I'm sure the Chef Chloe one is way yummier and decadent, but if you want super quick and satisfying, give this a try. :)
Mcdougalonline.com has a very interesting cashew milk french toast that I haven't tried yet but plan to. Go to the recipes section and look for Cashew French Toast. She says she has made it for her family for years. Mary McDougall has a lot of great recipes and I have tried several of them. I have tried Split Pea Soup, Penne Florentine, McVeggie Burgers, tofu sour cream, tofu mayo. I only use organic tofu and seem to have no problems with it but be sure and use only reputable companies for it.
