I have always wanted to try dandelion greens! How do you grow them? (that must sound like a crazy question since they grow wildly all over my yard)... I suppose you grow them like any green?
@Alaina... I had to comment on your candylion comment... My favorite musician, (Gruff Rhys of Welsh band Super Furry Animals) released a solo album called Candylion... if you don't mind, i'll share the link to the video here. my boys LOVE dandelions. they pick and eat the flowers like candy. i often catch them outside with yellow rings around their mouths :) i've tried them and they are rather sweet.
i have worned them that they can't eat them just anywhere. too many people think of dandelions as weeds and spray them with weed killer... this makes me sad. when we had the farm i used to joke that we "raised" dandelions because of the sheer number of them that grew around our 10 acres.
we picked them for the flowers and i did use the leaves in salads often as well.

dandelion greens are super bitter. beware...but so good for you...so go easy at first. thats why i only use a little in salad.

Dandelion greens are very good for your liver. My grandfather used to collect the flowers, unsprayed of course, and make the most wonderful dandelion and fruit wine. I wish I had his recipe. I'm not surprised to know the flowers taste sweet because the wine was sweet as well, partially influenced by the fruit too.

If you find dandelion greens bitter, then you can TOTALLY get all the nutritious goodness by adding them to a green smoothie! You can mix them with a sweet fruit like bananas and mangoes and put them in your blender, add a little water, and voila... a dandy green drink!
As an herbalist, dandelion is one of the first "herbs" we learn about. The bitter component is great for liver detoxification and also fabulous for the digestive track. It helps clean out the "junk". That's why it is so often included in the spring greens mix. These greens are best eaten before they flower, while the plant is still young...otherwise the leaves can be a bit tough. Dandelion wine is easy to make! There is a great recipe for it in Susun Weed's book "Healing Wise". Easy to do! But beware!!! This wine will kick your butt! Very tasty, but sweet and sock-it-to-me!
So just to make sure I'm on the same page here - I can just pick the dandelion leaves from all the dandelions growing randomly in my grass? Or are the kind you eat different that the ones that grow in your lawn?
