Hearty Pinto Stew -- with a twist.

Slowly converting myself to vegan............

I made the Hearty Pinto Stew last night (well, it started in the crock pot overnight...it's so hot here in NC that simmer on the stove wasn't going to happen.    My guy likes black-eye'd peas more than pintos so I added an equal amount of pintos, black-eye peas, great northerns and navy beans (the last 2 for me, of course).   It smelled so good in the house.   They were so good that he ate 2 bowls, which is good since he loves his meatssmiley-tongue-out.gif

He wanted beets for supper (I am relearning to like them) so I decided to slice up the beets and cook them and the beet green together.   I added a splash of balsamic vinager and to give it some zing....fresh raspberries.    The combination gave the beets just enough sweetness and they turned out quite good.

Anyone got any other ideas for more vegan bean sidedishes that I can fix that my good ole southern boy will like?  Thanks.
