HELP! Bake exchange

I have a Bake Exchange coming up at work (Earls Restaurant).
My coworkers have a hard time believing that vegan can be DELICIOUS. 
However, having only been vegan for about 5 months now I have yet to find the time to experiment with making desserts. 
Anybody have any scrumptious recipe ideas I could try?
I was thinking a cupcake.

I have a recipe from a cookbook called Are You Sure That's Vegan?.  If you go to the website, she will send you a mini book online, complete with pictures.  The chocolate cupcakes are really good.  A little denser than your typical cupcake, but super yum!  I also made the oreo truffles from Veganpandamonium.  Its a blog.  They were really good.  But, I'm not a big fan of the flavor of Tofutti cream cheese, so I stirred in some icing sugar to the cream cheese before mixing in the oreos.  It makes them even more decadent.  And then to make them festive, I used a bit or red and green frosting to do a little design on top.  FYI, my husband is not veg, and he loves both of these.

on the post before this the reindeer cookies, they look easy so im makin those also, in the recipes alicia posted monicas thumbprint cookies that i "have to" bring every fam gathering bc there so good and soo easy! def go to www.peasandthankyou.com shes got some awesome desserts and ive made most of them and can vouch! lol good luck
