help for a Vegan Paella recipe
hi all
i found this great recipe for Vegan Paella, that i really want to try, but it calls for veggie scallops or veggie lobster...
(my dad's side of my family is Puerto Rican, and i really want to make this for our family get together)
any recommendations or suggestions on where to find this, what brand is the best, or what to use as an appropriate substitute???

Oh this sounds delicious. I haven't heard of that either, but I would put the soy chorizo in there. I bet the baby portabella caps would replace the scallops. And regardless the saffron makes water taste like paella, so whatever goodies you have in there it'll be delicious! Good luck, and share your recipe, I would love to try it!

I would say just reference any paella recipe but add tons of different veggies instead of meat/fish.
I would use lots of portobello mushrooms since they are meaty in texture. 
Maybe add some nuts (cashews) and seeds into the mix as well.
With the right seasonings I'm sure your family won't miss the meat/fish at all!
