Hot Rice w/ Cold Lemon, Tomato & Basil

This dish is one of my absolute favorites ... ever!  I make it at least once a week, but usually twice ... it has been a staple of my diet since discovering TKD.  :)  Love, love, love it!

How'd it go Lola?  Do you love it?  I am making more today ... I love it so much ... love to just keep it in the fridge as a staple to snack on or eat with leftovers.  :) 
Just made this today!  It was sooo good!  I ate it with some steamed Brussels Sprouts as a side.
I made this to bring to work on Monday and left a batch at home. I didn't have any basil Monday but it was delicious anyway. Got some basil this morning, so I will have the 'real' thing tomorrow. So simple and good.
I wanted this recipe to work but I made it with brown rice instead of the arborio and it didn't taste flavorful enough to me. Does the rice make that much of a difference or maybe it is just me...LOL.

Hi Shuba ~ I've actually only made it with brown rice, so I don't know if it tastes a lot different.  I like the chewy texture of the brown rice.  Let me know if it's better w/ the arborio.  :)

I made this with Arborio yesterday. It needs quite a bit of salt I think. I loved it though and I ate it cold for breakfast this morning with shoyu on it. Great!
I ate this again tonight for dinner.  :)  I really need to try it w/ the Arborio.
This was my first vegan recipe and it's amazing! I'm an avid cook and when I read how she cooked the arborio I was very confused, I'm used to cooking it by slowly adding water and constantly stirring but Alicia says to cook it like normal rice. It turned out quite tasty but I think it's probably better made with regular brown rice. I plan to try that out soon
Has anyone made it in a rice cooker w/success?
hey sherri!  have you had any success with the rice cooker?  i haven't tried it in a rice cooker yet ... we have one but it's just sitting there in my cupboard.  :)

I know this is an old post, but I have made it in a rice cooker with success! I use short grain brown rice and I cook the rice by itself and then toss it with the other ingredients when it is done. One of my favorite vegan recipes so far. I do have one question though... when Alicia refers to using one cup of rice, is that cooked rice or uncooked rice? When I look on the serving size of my rice bag it says that 1/4 cup dry is for one person. But her recipe says that it serves two, so maybe she means one cup cooked?

Diane,  I'm not familiar with how rice cookers work.  Are they faster than cooking on a stove top?

I've only made it with Arborio, therefore don't eat it as often as I would like...I thought about making it with the brown rice but didn't know how it would taste. I am so excited to hear it's good! Now I can have it more often!
