How many of the recipes have you tried?

- And how did they turn out?

So far I've made:

Apple cinnamon oatmeal (no dates, I don't like dates), and I've gotten pretty good at it.  It has replaced my oatmeal packets in the morning.

Sweet potato lentil stew, made tonight for dinner.  I love cooking with FRESH foods, it smells so good in this house!  This one was a big hit, super easy, and I have some yummy leftovers for tomorrow.

Moroccan couscous with saffron.  Well, mine was without the saffron, because I forgot it.  This was my first time purchasing/handling a butternut squash, and I'm happy to say that it turned out wonderfully!

I'm seeing a trend here, and I'm thinking these recipes are all pretty delicious and, thank goodness for me, somewhat foolproof.  I changed a few things, or substituted, and halved and fourthed the recipes, and they still came out great.

What have you cooked?  What's your favorite, or what do you recommend?  I want to try some new things over the weekend!

I made the vegan chocolate cupcakes many times. YUM! 

I also make the sweet potato lentil stew a couple times a month. A big hit! I make my own version of mac & cheese with cashews (no yeast) and everyone loves it. 

Stuffed pasta shells, Tofu with orange dipping sauce, Tofu scramble, Mock tempeh tuna, Tofu egg salad.  

Mark - the cupcakes are next on my list.  They look terrific!

Are your family/friends vegan or vegetarian?  Mine are not, which sometimes adds a degree of difficulty to planning meals, but usually they will eat whatever I cook.

I'd like to try the mock tuna, but I am afraid of tofu and tempeh.  I have a fear that they are going to make me gag, and that soy is bad for my hormone balance.

I have probably tried 70% of the recipes in the Superhero section, and maybe 50% in the vegan section.  Here are the recipes that are my favorites right now (as in, I make almost all of these every week or two!):

nori burritos: my go-to lunch for work

thin mushroom pizzas: I have an addiction!

carrot & burdock kinpira: sounds weird, but so lovely!  I try to eat it at least once or twice a week.

Cuban-style roasted sweet potatoes: I would eat these every day if I could.

mochi waffles w/ lemon-walnut topping, with a side of steamed collards and some tempeh bacon: my all-time favorite breakfast

ginger-baked tofu: pretty much the only way I make baked tofu these days

dandelion, bok choy, & miso soup: either for breakfast or for a quick supper

fruity french lentils: I make this for parties, brunches, for my lunch, any excuse!


I can't wait for winter, cause all of the stew and soup recipes are so yummy!

I haven't been on here for a week or so. If you can't stomach tofu, do dry the tempeh. It smells really good once boiled and there are many flavor variations.  I'm the only vegan in my house but the dishes are so tasty that most are liked by the omnivore's :)

I also make Miso soup, bok choy and have made the radicchio  pizza many times.

Now that you mention it, I've tried quite a lot of them (granted, I've had the cookbook for a year now). I also loved the sweet potato lentil stew. Next time I would probably add the sweet poatoes a bit later or cut them larger - they were a little soft for my tastes. I didnt like the rustic pasta as much as some people did on the forum, but I think it was more that I should have maybe cooked the cabbage more and the texture weirded me out, because the sauce aspect was actually really good.

I tried the barley casserole, my roommate loved it and although it wasnt my favourite, I would give it another try. I dont think we 100% stuck to the recipe so next time I would. The clean mean burritos were very yummy.

The azuki bean with kabocha squash recipe totally didnt turn out for me, and I remember reading that it might be because the type of pot you use is very important for good results. But I also think that it just didnt have enough flovour for me. I would try it again, but that batch just ended up in a pot of chili.

The summertime succhotash was just lovely, as were the crispy peanut butter treats. I actually made a huge batch of them for while I travelled this summer and they are just incredible! I also love the raw balls - me and my roommate make them all the time to keep in the freezer, and we have made variations of it (like vegan coco instead of carob, adding peanut butter, covering them in almond rather than coconut, etc.). They are so much fun to make! The black-eyed pea croquettes were also a big success.

The lentil stew is probably my favourite though. I make it probably every other week. The broth reminds me of beef broth (which is something I really miss, I loved beef stew!) and it just is so yummy with some rice added when serving it, or with bread. I also added some steamed kale and broccoli to make it more of a complete meal. I would highly recommend it!

The caesar salad recipe is great.  I don't use her croutons,...just the dressing, and I buy vegan croutons.  I'm having it tonight.

And the tuna "kinda" salad recipe with the tempeh is awesome.  But, she blanches each veggie one at a time, which is way time consuming.  I just toss them all in together and then strain it.  I highly reccommend this on a wrap.  Yum! 

And fyi, my meat-lovin' husband loves both of these recipes. 

We've made quite a few recipes out of The Kind Diet, and I can't think of one that was a total fail, some have become staples for us! Going through the book, the standouts for me that I make over and over are:

Raddichio Pizza, Rustic Pasta, Barley Cassarole, Crispy Tofu with Orange Dipping Sauce(and Jenee, don't be afraid of tofu and tempeh! I prefer tempeh myself, because I don't really like tofu's texture. I think in moderation, soy is perfectly safe), Eggplant Chana Masala, Sweet Potato Lentil Stew, Artichoke Dip and Cheesy, Oozy Guacamole Bean Dip (I make both a lot when we have people over, or need something to take to a party. Everyone raves about both, and I get a lot of "really? thats vegan?!, Thin Mushroom Pizza, Nabeyaki Udon, Black-Eyed Pea Croquettes (The price of buying TKD was totally worth this one recipe. I make it several times a month in different variations), Fruity French Lentils, Tuna Salad (Kinda) and Tofu Salad (I make lots of variations on these with whatever is in the house. I don't bother blanching the veggies at all - just throw them right on in), Baby Bok Choy (LOVE LOVE LOVE!! I use the Ume dressing on everything, but Bok Choy is now my favorite veggie thanks to this recipe!), Braised Daikon, and Christopher's Cauliflower Steaks.

I haven't made a lot of the desserts or breakfast things, but I think I should work on that next!
