how to fall in love with greens...

I love to roast kale until it becomes crispy and eat it like chips or crush it up and mix it into my power rice. I have brown rice, green onions, mushrooms, peas, amino acids, sunflower seed, gomashio and kale fried rice every single day for breakfast!

I just juice the ones that I don't like with some apple and tada!!  A tasty green drink!!

Question - I like to eat my kale raw....i wonder if she lightly steamed it like the baby bok choy or was it raw like a salad???

We've been doing Brazilian Collard Greens for a couple of years now.  Real simple: just cut the greens into thin strips (they'll cook super fast this way too), a few coves of garlic and a little olive oil.  Started getting into brocolli greens this year, too.  Just sautee them up wtih a little olive oil until they get crispy.  A little salt and pepper, and those things are delicious! 

Yes, what is better...steamed or raw?

Hey Dolores, the baby bok choy is steamed, it is a recipe from The Kind Diet and it is delicious, I make it all the time and actually crave it. 

I also love my greens steamed slightly and I add a sauce topping ( I make it in the food processor) with nuts, ume vinegar, rice vinegar, and garlic and it is super tasty too.

The ume-flax dressing is sooo good..and I am in love with kale. Steamed kale, kale smoothies , kale chips ... yum!

i like sauteeing greens in vegetable stock (i use very little oil in my diet) with onions, garlic, and smoked paprika.

on special occassion i'll saute the greens in coconut oil. delicious!

I have also been really digging the brussels greens.  I think you can make the greens however you like them best and experimenting seems to be the best way for me.  I love greens raw, steamed or sauteed.  One thing my mom always told was that most people don't like vegies because they over cook them and I think that makes a lot of sense.

lightly steamed or blanched always better than raw. nourishes organs.

Agree with loving our greens. Last dinner had bok choy chopped and sauteed in  olive oil and a small pat of butter with scallions and added 1/4 cup of vegetable broth and cooked for approx. 6 mins. Was delicious with a bit of crunch and served with jasmine rice with a spritz of fresh lemon. Do try, you'll enjoy.

Alicia is right!  This is a great way to get aquainted with greens.  I fix them this way because of the kind diet and now I CRAVE bok choy!   Who knew?  I never had it before reading the book.  Now it just happens to be on the menu for lunch today wth the brown rice cooking on the stove.  Love it and love the way I feel.  One year vegan anniversary was Thanksgiving!!

The other morning I had some mixed beans with collared greens on a whole grain wrap. Actually, I had it 2 days in a row. It was yummy! I added a bit of tomato paste, onion, garlic, cumin and chili powder to the beans, and a little dab of earth balance to the collards. One of my other faves is wild rice, pinto beans and collard greens! :)

I usually have really bad cramps every month. Bad to the point of balling up on the couch for at least a whole day. Since I started eating steamed collards and miso soup for breakfast every morning my cramps have completely disappeared - not even a trace of a cramp. I want to tell everyone I know. 

Hippocrates had it right!

I steam my greens and add a dash of shoyu and sometimes a sprinkle of nutritional yeast. I will try the ume vinegar tomorrow!
