I NEED FOOD HELP!!
Okay, so my work is having a potluck on Wednesday (I know, short notice,) and I was looking for some ideas for a vegan dish. I am the only vegan person at my work but I want to show them that vegan doesn't have to mean not delicious. The only problem: the potluck is going to be at about 12:00 ish and I get to work between 6:30-8. We don't have an oven and will have a hard time re-heating anything. That is the only real problem, I was going to bring Shepherd's Pie but that would have to be heated. Also, I'm doing this on a selfish note too. Since none of them are vegan, I would not have anything to eat. They've released a tenative menu and it's chili, mac & cheese, sour cream, chocolate cake, rum cake, ice cream...there isn't anything on the menu that is vegan - except for the fruit tray and it's Washington - there is no fruit in season here! So...any help is much appreciated!

Pasta salad would be easy and great cold. You can mix bow-tie pasta with chick peas or kidney beans with a few different vegetables. I would be as selfish as you want, make something you like and enjoy so that you have something to eat.

I've also made the barley casserole from Alicia's book and eaten it cold for leftovers...I don't know if it's just me but I thought it was good warm or cold! If you wanted it warm and wanted to invest some money in a thermal dish/bag that would keep your food warm that could be a consideration too!

I did this for my work potluck too. We go to this great restaurant and they have this Vino Bambino salad that everyone loves. I veganized it and I swear they didn't know!

Also, do you have a crockpot? It's a great investment. You could make some vegan chili and cornbread and it can sit in the crockpot heating up all morning (always best the next day anyway).

The Moroccan Coucous dish from the TKD book can be eaten at room temperature. Also, the quinoa dish Alicia shared on this site when she went to her friend's Leisha's house...that's good too.

Then there's always BREAD!  My personal favorite!!  Grab a tub of Earth Balance and a great loaf of Sourdough and you're in!  Or if you want something a little different, I posted a "Coleslaw with a twist" recipe in the food section.  It's a Curry Coleslaw that I love!  It's colorful and tasty!
