As a wedding gift, one of my sisters paid for a fancy hotel room for my hubby and I. She called up and asked their cook to make me a special vegan breakfast and gave him this recipe. It was sooooo goooood, and I've been wanting it again ever since!

As a whole plant based diet advocate, I find this over-processed food to be gross. I'd like to know how much saturated fat is in this abysmal excuse for food.
Anyone who has too much body fat or has a family history of vascular disease should run quickly the other direction.

I eat a lot of non-breakfast foods for breakfast, but if I'm on the run, Lärabars are the way to go. And where did I learn about Lärabars? Here on The Kind Life!
Eggs Benedict is probably the only food from our non-veg days that my family still misses. I personally think it was more the tradition of sitting down to the full-on holiday brunch once or twice a year more than the actual food but what-ever! I'm definitely going to try this recipe out next time we have an occasion.
I totally agree with Dan Westford, this is not "food". It's far from healthy whole foods but with that said, what would life be like without the occasional birthday cake or celebratory meal? This one is definitely not for everyday or even weekly consumption (ok Alicia, pregnancy does stuff to us...I was addicted to blue Slurpees with my 1st). As long as we eat things like this in moderation (and for me; who needs to lose weight for health reasons, moderation means once or twice a month at the most), there is nothing wrong with giving in to temptation. It keeps us from binging all the time.
Here is a fantastic vegan bacon recipe, even my meat eating friends like it!
3 large handfuls of large flake, unsweetened coconut
1 Tbsp. liquid smoke
2 Tbsp. tamari
1 Tbsp. water
1 Tbsp. maple syrup (optional, but recommended)
Preheat oven to 300. Place coconut in a shallow baking pan. Combine other ingredients together in a small bowl and drizzle over coconut. Use your hands to mix and make sure the coconut is evenly coated. Bake at 300 for 20 minutes, or until crisp. It will continue to crisp as it cools, and is best eaten at room temperature.
