Yay! This sounds delish! I like the Tinkyada brown rice penne pasta instead of the whole wheat :) It's not mushy! And they sell it in the health food isle at my local Stop & Shop!
Looks yummy but I don't see any protein in the ingredients so I might pad it out with some crumbled vegan burger. PS -- Rachael Ray also does some veggie recipes in her books and shows.
That looks delicious! I made my first vegan lasagna the other night using tofu, and it was BETTER than any other lasagna I have ever made! And I used Rice lasagna noodles. The BEST!

This looks and sounds heavenly. I have been procrastinating and just visiting vegetarian/veganism for several months now, really beginning flirting. Now I am ready! And this sounds like the perfect dinner to jump in with this evening! I am sooooo looking forward to all of this and I have been really enjoying reading Alicia's book, The Kind Diet! Thank you so much, Alicia, for sharing your journey with all of us. I am hopeful that in a month or so, I can share the beginning of my journey with people!
